Apple Slaw
Ingredients
- 1 large apple, sliced into matchstick pieces
- 1 and ½ cups match stick carrots
- ⅓ cup raisins
- ¼ cup almonds, toasted (optional)
- ½ cup mayonnaise
- ½ cup Greek yogurt
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- salt and pepper to taste
Instructions
- If toasting almonds, add to a dry skillet over medium heat. Keep an eye on them and stir them every few minutes until they are lightly brown and fragrant. Remove from heat to cool.
- While the almonds are toasting. Prepare the other ingredients. Cut a apple into thin matchstick size pieces. Add the matchstick apples to a bowl along with the carrots, raisins, and cooled almonds.
- Whisk together the mayonnaise, yogurt, apple cider vinegar, honey, salt and pepper. Serve right away or chill until ready to serve.
