Apple Slaw

Apple slaw is the perfect side dish when you want something fresh, crisp, and full of flavor without spending much time in the kitchen. Made with crunchy matchstick apples and carrots instead of cabbage, this easy apple slaw is tossed in a creamy, lightly sweet and tangy dressing that lets the fresh ingredients shine. It's one of my favorite recipes for everything from weeknight dinners to potlucks, barbecues, and holiday gatherings because it's quick to make, beautiful on the table, and always disappears fast.

Ingredients

  • 1 large apple, sliced into matchstick pieces
  • 1 and ½ cups match stick carrots
  • cup raisins
  • ¼ cup almonds, toasted (optional)
  • ½ cup mayonnaise
  • ½ cup Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • salt and pepper to taste

Instructions

  • If toasting almonds, add to a dry skillet over medium heat. Keep an eye on them and stir them every few minutes until they are lightly brown and fragrant. Remove from heat to cool.
  • While the almonds are toasting. Prepare the other ingredients. Cut a apple into thin matchstick size pieces. Add the matchstick apples to a bowl along with the carrots, raisins, and cooled almonds.
  • Whisk together the mayonnaise, yogurt, apple cider vinegar, honey, salt and pepper. Serve right away or chill until ready to serve.
