Key Ingredients
broccoli- fresh broccoli is what you will need for this salad. I like to remove the broccoli stalks even though they are edible, I like the look of just the florets in the salad. Make sure to get a little over a pound to so you have enough florets.
red onion- adds a pop of color and a little flavor boost. A little goes a long way in this salad so a ¼ cup finely chopped is plenty.
dried cranberries- of course we know these as Crasins and they add a nice sweetness to the salad.
slivered almonds- add a little crunch to the salad.
sunflower seeds- these add a little crunchy salty bite as well (and make sure to get the shelled variety).
Greek yogurt- I like to use Greek yogurt in place of mayo in salad dressings. You can always use mayonnaise if you prefer.
rice vinegar- is a milder than apple cider vinegar or white vinegar. I use it in many salad dressings and marinades.
garlic and onion powder- these pantry staples add a boost of flavor to the dressing.
Dijon mustard- my favorite is a grainy Dijon. It is so delicious in dressings.
olive oil- this will give a richness to the dressing and will help the dressing cling to the broccoli.
lime juice- this will add a nice little pop of citrus. You could use lemon juice too.
salt and pepper- a little salt and pepper can add a boost of flavor to most recipes.
Step-By-Step Instructions
Start by washing your broccoli and patting it dry with paper towels. Chop the florets into small bite sized pieces. I like to remove the stalks even though they are edible. If you plan to do this buy a little more than a pound of broccoli so you have plenty of florets for the salad.
Chop the onion into small pieces and add that to a large mixing bowl along with the broccoli. Add the dried cranberries, almonds and sunflower seeds to the bowl.
In a separate bowl, add the dressing ingredients. Stir well to combine. I like to taste test with a piece of broccoli to make sure I've added enough salt, pepper and honey to the mixture. Feel free to do the same and add a little extra if necessary to suit your tastes.
Pour the dressing over the salad ingredients and toss to coat. You can serve the salad immediately although it is better to chill for a few hours. The broccoli needs time absorbs some of the dressing and all of the flavors develop.
Make Ahead
This creamy broccoli salad can be made ahead (and should be made ahead). Refrigerate for at least an hour or up to 24 hours. If you want to make this further in advance it is best to keep the salad and the dressing in separate containers and toss it together the day you are serving.
Storage
Store any leftovers in an airtight container for 24 hours. The salad will still taste good after that but may not be quit as crisp.
Substitutions And Additions
red onion- you could add green onions or shallots to this salad. They have a bit milder flavor. If you are not a fan of raw onion you can simple leave it out.
bacon- many people like to add crispy bacon to broccoli salads. Feel free to add this if you like.
Greek yogurt- if you are not sure about a salad dressing with Greek yogurt (just try it, it's delicious!) you can make this with equal parts mayonnaise too.
fruit- I think fresh blueberries would be delicious in this salad!
rice vinegar- this is something I have on hand, but if you do not use apple cider vinegar.
lime juice- lemon juice will work well too in this recipe or just add a touch more vinegar.

Easy Broccoli Salad With Creamy Greek Yogurt Dressing
Ingredients
Broccoli Salad
- 1 pound broccoli crowns, trimmed and cut
- ¼ cup red onion, diced
- ⅓ cup slivered almonds
- ⅓ cup sunflower seeds
- ½ cup dried cranberries
Salad Dressing
- ¾ cup plain Greek yogurt
- ¼ cup olive oil
- 2 tablespoons rice vinegar
- 1 tablespoon lime juice
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Wash the broccoli and dry with paper towels. Remove the stalks and cut the florets into small bite sized pieces. Add the broccoli to a large bowl.
- Chop the onion into small pieces and add that to the bowl along with the almonds, sunflower seeds and dried cranberries.
- In a separate bowl add all of the dressing ingredients. Combine well and pour over the salad. Toss to combine and refrigerate for a couple hours so the broccoli can absorb the dressing and the flavors can blend.
