- 3 Romaine lettuce hearts, cut and washed
- 1 shallot, thinly sliced
- 1 cup parmesan cheese, grated
- ½ cup croutons, crushed
Lemon Dressing
- zest of 1 lemon
- juice of 2 lemons
- 3 tablespoons olive oil
- 1 teaspoon honey
- ½ teaspoon Dijon mustard
- salt and pepper to taste
Instructions

- Start by trimming off the bottom of the romaine heart to remove the core. Then, slice it thinly across to create fine, shredded pieces. Wash and thoroughly dry the lettuce in a salad spinner or with clean kitchen towel. Add to a large serving bowl.
- Thinly slice the shallot and grate the parmesan cheese. Add both to the Romaine lettuce.
- Put the croutons in a sandwich baggie and use a meat mallet or rolling pin to crush the croutons. Sprinkle in the salad.
