Salad
Start by trimming off the bottom of the romaine heart to remove the core. Then, slice it thinly across to create fine, shredded pieces. Wash and thoroughly dry the lettuce in a salad spinner or with clean kitchen towel. Add to a large serving bowl.
Thinly slice the shallot and grate the parmesan cheese. Add both to the Romaine lettuce.
Put the croutons in a sandwich baggie and use a meat mallet or rolling pin to crush the croutons. Sprinkle in the salad.
Lemon Dressing
Zest one lemon and juice the 2 lemons into a mixing bowl. Add the olive oil, honey, mustard salt and pepper to the bowl and mix well.
Drizzle the dressing over the salad and toss to coat the salad with dressing. Serve immediately.
