The best part is that this amazing dinner comes together in just 30 minutes. You can pair it with pasta or keep it low carb with a simple salad or vegetable side dish.

Key Ingredients
grape or cherry tomatoes- I love the sweet flavor of these small variety of tomatoes, but you can use roma tomatoes or any type you prefer.
basil- you really need to use fresh basil leaves to make bruschetta. I have a basil plant growing outside so I have fresh basil all year, but they also sell fresh cut basil in the produce section of most grocery stores.
red onion- adds great flavor to the bruschetta.
garlic-minced fresh garlic adds so much flavor to the bruschetta and can not be duplicated with garlic powder.
chicken- boneless skinless chicken breast cut into cutlets or buy precut chicken cutlets.
balsamic glaze- balsamic glaze is a reduction of balsamic vinegar. It is easy to make or you can buy the glaze in most grocery stores.
oregano, sage and garlic powder- dried oregano, dried sage and garlic powder seasons the chicken to give it great flavor. You can also use an Italian seasoning blend if you have that on hand.
salt and pepper- is always a seasoning staple.
Step-By-Step Instructions
Prepare the bruschetta ingredients by quartering the grape tomatoes, mincing the garlic and cutting the basil chiffonade style. Add the bruschetta ingredients to a small bowl and drizzle with olive oil. Set aside to marinate while cooking the chicken.
Heat a large skillet over medium heat. Slice the chicken breast into chicken cutlets by slicing through the chicken breast horizontally into two thin chicken breast. Season chicken with oregano, sage, garlic powder, salt and pepper.
Add olive oil to hot skillet and add chicken when the oil is hot. Cook on each side for 3-4 minutes or until the chicken is cooked through. Use a meat thermometer to make sure the chicken reaches 165° F.
When the chicken is cooked through remove the skillet from the heat and top the chicken with bruschetta mixture. Drizzle the balsamic glaze over the chicken bruschetta.

Easy Bruschetta Chicken Skillet Recipe

Ingredients
Bruschetta
- 1 cup grape tomatoes, cut into quarters
- 1-2 garlic cloves
- 2 tablespoons finely chopped red onion
- 2 tablespoons fresh basil leaves (about 6 large leaves)
- 1 tablespoon olive oil
- ¼ teaspoon salt
Chicken
- 2 large boneless skinless chicken breast, cut into cutlets
- 1 teaspoon oregano
- ½ teaspoon sage
- ¼ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 teaspoons olive oil
- 2 tablespoons balsamic glaze
Instructions
- Chop tomatoes, red onion, and garlic and add to a small bowl. Roll up the basil leaves and cut in a chiffonade style which means thin ribbons and add basil to the tomato mixture.
- Drizzle tomato mixture with a tablespoon of olive oil and season with ¼ teaspoon of salt. Set mixture aside to marinate while preparing the chicken.
- Use a sharp knife to cut the chicken breast horizontally into two separate chicken cutlets. Season the chicken on both sides with oregano, sage, garlic powder, salt and pepper.
- Heat a large skillet over medium heat. Add 2 teaspoons of olive oil to the skillet. Once the oil is hot add the chicken to the skillet and cook on the first side for 3-4 minutes and then flip and cook for an additional 3-4 minutes. Chicken should be cooked through and golden brown. Use a meat thermometer to check that the internal temperature reaches 165° F.
- Remove the skillet from the heat and add the bruschetta to the chicken. Drizzle with the balsamic glaze. Serve right away with pasta, rice or a simple salad.
