    What Exactly Are Overnight Oats?

    Overnight oats are raw oats that have been soaked overnight in liquid. The oats absorb moisture, resulting in a delicious no-cook version of porridge. This would usually be things like almond milk, hemp milk, coconut milk or Greek yogurt. Add everything together and refrigerate overnight so they are ready to eat the next morning. This is the perfect breakfast for busy weekdays!

    Overnight oats are meant to be eaten cold but you can warm them and I do give tips on this.

    Many people enjoy different toppings and flavors (more on that later) and it is the perfect easy breakfast, especially if you have a sweet tooth. 

    Equipment Needed

    mason jars- are best for storing overnight oats but any airtight container will work. mixing bowl - So that you can combine all of the ingredients together.

    Key Ingredients

    old-fashioned oats- old fashioned oats also called rolled oats, are the preferred type of oat for overnight oats. They are less processed and hold their texture better than quick oats. Steel cut oats are less processed so they would need to cook first.

    pumpkin puree-canned pumpkin puree makes this recipe easy. Make sure to buy 100% pure pumpkin and not pumpkin pie filling which has added sugar and spices.

    pumpkin pie spice- is a blend of spices that are used for pumpkin pie, pumpkin bread and other pumpkin desserts. The spices and amounts can vary slightly but typically contain cinnamon, nutmeg, ground ginger, allspice and cloves. You can make a batch of this homemade pumpkin pie spice or buy it premade.

    almond milk - I like to use unsweetened vanilla almond milk in my overnight oats but you could use whole milk, oat milk, cashew milk, soy milk, or any other plant-based milk you like. 

    maple syrup - pure maple syrup adds extra sweetness to the overnight oats. 

    vanilla extract - a great way to add some extra flavor to the overnight oats 

    Greek yogurt - this adds extra creaminess to the overnight oats. You could use other flavored yogurt if you wish. 

    chia seeds - An easy way to add extra texture to the recipe.

    Step-By-Step Instructions

    In a large mixing bowl, add the almond milk, pumpkin puree, maple syrup and spices. Mix well to combine the ingredients. Add the oats and chia seeds to the pumpkin mixture.

    Portion the pumpkin oat mixture into three individual serving containers. I like mason jars or glass jars for an easy grab and go breakfast in the morning.

    Serving Suggestions?

    Greek yogurt- A dallop of Greek yogurt or even whipped cream is excellent with the pumpkin oatmeal.

    maple syrup - Add a drizzle of maple syrup on top before eating.

    fruit - overnight oats work really well with fresh fruit. Berries especially are really tasty. You could add strawberries, raspberries, or blueberries. You could also use frozen fruit. 

    nut butter - Some of my favorite toppings are nut butters. You could add a spoonful of peanut butter to the overnight oats. The nutty flavor works well with pumpkin in this overnight oats recipe.  

    pumpkin seeds-add a little extra crunch to the oatmeal.

    Can You Heat Up Overnight Oats?

    Overnight oats are traditionally eaten cold. This is because the oats have the time to soak up the moisture and then become soft and digestible to be eaten cold. However, if you like warm oats then you can heat up your overnight oats in the microwave for 60-90 seconds or until heated through.

    Storage Recommendations

    Store overnight oats in an airtight container in the refrigerator for up to 5 days.

    How Long Can You Store Overnight Oats?

    Make sure you have prepared your overnight oats in airtight containers. Mason jars with lids are great for this. Once you have made the overnight oats portions they will store in the refrigerator for up to five days. 

    Can You Freeze Overnight Oats?

    Yes you can freeze overnight oats. This is ideal to prep ahead for a nutritious and balanced breakfast. However, there are some things to remember to ensure that you get a great result when they thaw. Leave out any fresh toppings when you freeze the oats.

    Once you have the combination right you can freeze overnight oats for up to three months. Allow to thaw overnight before adding any fresh toppings and enjoying for breakfast. 

    Substitutions And Additions

    maple syrup- you can use honey or agave syrup to sweeten the pumpkin overnight oats.

    spices - we have used homemade pumpkin spice flavor in this recipe but you could substitute them for cinnamon in this recipe.

    protein- if you want an extra protein boost, add a scoop of vanilla protein powder to this overnight oats recipe. 

    almond milk - you can use whichever milk you like. The almond flavors work well with the pumpkin but any milk will do.

    Ingredients

    • 1 cup almond milk
    • ⅓ cup pumpkin puree, not pumpkin pie filling
    • 1 teaspoon pumpkin pie spice
    • ¼ cup vanilla Greek yogurt
    • 2 tablespoons maple syrup
    • 1 teaspoon vanilla extract
    • 2 cups old-fashioned oats
    • 1 tablespoon chia seeds
    • 2 tablespoons chopped pecans

    Instructions

    • In a large bowl add the almond milk, pumpkin puree, pumpkin pie spice, Greek yogurt, maple syrup and vanilla extract. Mix well.
    • Add the old fashioned oats and the chia seeds to the pumpkin mixture. Stir to combine.
    • Portion the oats into three single serving containers. Top with pecans and a dallop of whipped cream or Greek yogurt.
    • Store the pumpkin overnight oats in the refrigerator for at least 4 hours before serving. Overnight oats last for 4-5 days in the refrigerator.
