    Baked Apple Oatmeal

    Baked Apple Oatmeal is a sweet creamy oatmeal recipe with tender apples and crunchy walnuts.  This baked oatmeal recipe can be made ahead and warmed up the next day.

    My husband and I are on a baked oatmeal kick.  I've been experimenting with a lot of recipes with different ingredients such as bananas, apples and even peanut butter.  With hubby being my official taste tester, I value his opinion on my different recipes.  After every new baked oatmeal recipe, he proclaims it's his new favorite!  So I guess they are all pretty good!  If you are craving apple pie this might curb those cravings!

    Is oatmeal good for weight loss?

    Oatmeal is high in fiber.  When you eat foods that are rich in fiber it helps keep you feeling full longer.  If you are looking for a healthy breakfast that will keep you away from snacks mid morning, oatmeal is definitely a great option.

    Ingredients and substutions in Apple baked oatmeal

    • applesauce
    • maple syrup- or honey
    • coconut oil- or avocado oil
    • egg
    • almond milk- any milk will work
    • vanilla extract
    • old fashioned oats
    • cinnamon
    • salt
    • apples
    • walnuts- or pecans
    • dried cherries- raisins or dried cranberries

    I used Honeycrisp apples because that is my husbands favorite and what I had on hand.  You can use your favorite variety of apple.  There is no need to peel the apples.  Just chop them in small bite size pieces.

    You do not need to add the dried cherries, however I absolutely love the tart flavor paired with the apple.  If you have raisins or dried cranberries they will work well too!

    how do you make baked oatmeal?

    Baked oatmeal is a pretty forgiving recipe.  I think that is why I like it because you can add everything to one bowl, mix and pour into a baking dish.  You can make this in any baking dish.  I have even made baked oatmeal in a pie plate.  The recipe can be easily doubled and baked in a 13x9 rectangular dish if you are cooking for a crowd or want a make-ahead breakfast for the week.baked apple oatmeal with maple syrup being drizzled over top

    Should you make oatmeal with water or milk?

    Adding moisture to your baked oatmeal is key for getting that creamy texture.  Of course by adding milk or milk alternatives like almond milk you are adding a little flavor that you wouldn't get from just plain water.  Keep in mind that when I calculate the nutritional information I use unsweetened almond milk.  If you use skim or low fat milk it will alter the information slightly.

    Ingredients

    • ½ cup apple sauce
    • ⅓ cup pure maple syrup
    • ¼ cup coconut oil
    • 1 egg
    • 1 cup almond milk
    • 2 cups old fashioned oats
    • ½ teaspoon cinnamon
    • ¼ teaspoon salt
    • 4 cups apples, chopped
    • ½ cup walnuts, chopped
    • ⅓ cup dried cherries

    Instructions

    • Preheat oven to 375. Spray 8x8 square baking pan with cooking spray. Set aside,
    • In a large bowl mix together apple sauce, maple syrup, coconut oil, almond milk and egg.
    • Once mixed add oats, cinnamon, salt, chopped apples, walnuts and cherries to bowl.
    • Pour everything into prepared pan and place in oven to bake for 25 minutes.
