Ingredients

  • ½ cup apple sauce
  • cup pure maple syrup
  • ¼ cup coconut oil
  • 1 egg
  • 1 cup almond milk
  • 2 cups old fashioned oats
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 medium apples, chopped into bite-sized pieces
  • ½ cup walnuts, chopped
  • cup raisins

Instructions

  • Preheat oven to 375. Spray 8x8 casserole dish with cooking spray.
  • In a large bowl or in the baking dish, mix together apple sauce, maple syrup, coconut oil, almond milk and egg.
  • Once mixed add oats, baking powder, cinnamon, salt. Stir to combine.
  • Add the apples, walnuts and raisins and use a spoon to stir well and spread in to the baking dish. Bake for 25-30 minutes or until the milk has absorbed and the oat bake is firm.
  • Cool for 5 minutes before serving. Add a spoonful of Greek yogurt and extra maple syrup if desired.
