Rich in pumpkin flavor with the warmth from the spice flavors and sweetness of the chocolate chips these cookies simply have it all. These soft pumpkin cookies practically melt in your mouth.
This recipe is so easy to make and you only need a handful of ingredients. They can be served up at gatherings or just make a batch to enjoy during the weekend with your favorite hot drink. Key Ingredients
Spice cake mix box - The box of cake mix is what helps to give the cookies texture and, of course, flavor. I love the spice flavor as I think it works so well with the pumpkin.
Pumpkin puree - Don’t be tempted to use pumpkin pie filling because you need pumpkin puree. This is because pumpkin pie filling has additional flavorings and would add too much spice and sweetness.
Egg - The egg is what helps to give the cookies structure and bind everything together.
Vegetable oil - An easy way to bind the dry ingredients together from the cake mix.
Chocolate chips - This is what will add that extra sweetness to the cookies. And chocolate is surprisingly delicious with pumpkin!
Step-By-Step Instructions
Gather all of your ingredients together and preheat the oven to 350°F. Line a cookie sheet with parchment paper.
In a large mixing bowl add your box of spice cake mix, pumpkin puree, egg and vegetable oil. Stir well until all dry streaks of cake mix are mixed in. Stir the chocolate chips into the batter. The batter will be very thick.
Use a cookie scoop to portion out the cookie dough about 2 inches apart on the cookie sheet. I used a #40 which made 26 cookies. You can make these cookies bigger or smaller but remember to adjust the baking time and spread them evenly on the sheet.
Bake in the preheated oven for 10-12 minutes. The cookies should not be doughy in the center. Mine were perfect at 11 minutes.
Cool on the baking sheet for a minute and then use a spatula to transfer the cookies to a wire rack to cool completely.
Storage
These are great cookies to make a big batch of, but if your home is like mine, they won’t last too long. You can store the cookies at room temperature for 3-4 days in an airtight container. These cookies are also excellent for freezing. You can freeze for up to 3 months. They can be easily stored in a freezer bag or container with layers of parchment paper separating the cookies so they do not stick together.
Substitutions And Additions
- Chocolate chips - I like to use milk chocolate chips in my cookies but the flavors of the pumpkin and spice will lend themselves well to dark chocolate or white chocolate chips.
- Pumpkin puree - I use a can of pumpkin puree, not pumpkin pie filling. You could make your homemade pumpkin puree if you prefer.
- Cake box mix - You could use a yellow cake mix or a white cake mix instead or even a chocolate cake box mix. Any flavor of cake mix will work. You could add a teaspoon of pumpkin pie spice or other warming spices like nutmeg to help balance the flavors.
- Frosting - Why not add some vanilla frosting to these cookies? You could also drizzle some white vanilla icing across the top while they are on the cooling rack. Or add a cream cheese frosting like these scratch made Pumpkin Cream Cheese Cookies.
- Sprinkles and powdered sugar- If you do use some cream cheese frosting or icing then you could add some decorative holiday sprinkles. Or just add a sprinkle of powdered sugar to finish them off.

- 1 15 ounce can pumpkin puree (not pumpkin pie filling)
- 1 large egg
- ¼ cup vegetable oil
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F. Line a cookie sheet with parchment paper.
