Step-By-Step Instructions
Preheat your oven to 350°F. Line a 9x5-inch loaf pan with parchment paper and spray with nonstick baking spray.
In a small bowl, mix together the brown sugar and cinnamon for the cinnamon sugar layer and set it aside until you're ready to assemble the loaf.
Peel and chop the apples into small, uniform pieces. Sprinkle with the brown sugar, cinnamon, nutmeg, and allspice, then set the apple mixture aside.
Make the Bread Batter
Add the butter and both sugars to a large mixing bowl and cream together until light and fluffy.
Slowly pour in the oil and continue mixing until fully combined. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla.
In a separate bowl, whisk together the flour, baking powder, and salt.
Add half of the flour mixture to the wet ingredients gradually while mixing.
Pour in the milk and Greek yogurt and continue mixing, then add the remaining flour mixture and mix just until combined, with no streaks of flour remaining.

Assemble the Loaf
Spread half of the batter into the prepared loaf pan, smoothing it into the corners in an even layer.
Top with half of the chopped apples, then sprinkle with half of the cinnamon sugar mixture.

- 1 and ½ teaspoons cinnamon

- 2 tablespoons light brown sugar
- 1 teaspoons cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon allspice
Bread Loaf Recipe
- ¼ cup unsalted butter, softened
- ⅓ cup granulated sugar
- ⅓ cup light brown sugar, lightly packed
- ¼ cup neutral oil
- 2 large eggs
- 1 teaspoon vanilla bean paste, or extract
- 1 and ½ cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ⅓ cup milk
- ⅓ cup Greek yogurt, or sour cream
Glaze
- 2 tablespoons unsalted butter
- ¾ cup powdered sugar
- ½ teaspoon vanilla bean paste, or extract
- 2-3 tablspoons milk, until desired consistency is reached

- Slowly add half of the flour mixture to the wet ingredients while mixing. Add in the milk and Greek yogurt, continuing to mix. Add the remaining flour mixture and mix until just combined and there are no visible streaks of flour.
- Assembling The Bread
- Add half of the bread batter in the prepared pan. Smooth into the corners the layer is smooth. Add half of the chopped apples on top of the batter. Sprinkle with half of the cinnamon sugar. Repeat the layers, by spreading the remaining batter, apples and finally the remaining cinnamon sugar.
- Bake in the preheated oven for 50-55 minutes or until a toothpick comes out clean. Let cool for 10 minutes. Use the parchment and lift out of pan and cool on a wire rack.
Glaze
- When bread has cooled make the glaze by melting 2 tablespoons of butter in a skillet or sauce pan over medium heat. Use a whisk to continuously stir the butter for several minutes until it begins to brown. Remove from heat and allow to cool for a few minutes. Stir in the powdered sugar, milk and vanilla. Add a tablespoon of milk at a time until the desired consistency is reached.
- Slice and serve. Cake can be stored at room temperature for 1-2 days or in the refrigerator for up to 5 days.
