Why You'll Love This Apple Coffee Cake Recipe!
This isn't just any apple coffee cake recipe- it's the kind you'll want to make on repeat all autumn long. With a tender cake, cinnamon spiced baked apples, and that buttery cinnamon streusel on top, every bite tastes like fall. And then there's the caramel icing that takes it to the next level. Here's why this one earns a permanent spot in your fall baking rotation
- Layered: The apples and streusel are baked right into the middle of the cake, not just sprinkled on top, so every slice gets that filling.
- Bakery-style crumb topping: Cold butter cut into the streusel keeps it clumpy and thick instead of sandy, so you get real, chunky crumbs.
- A caramel finish, not just a glaze: The brown sugar and cream icing sets this apart from a basic powdered sugar drizzle.
- Simple pantry ingredients: No specialty flours or hard-to-find items, just what you likely already have on hand.
- Great for breakfast or dessert: Serve it with your morning coffee or warm with a scoop of vanilla ice cream after dinner.

Equipment Needed
- 8x8 inch baking pan; a metal or glass pan both work well here
- Parchment paper, for easy removal
- Pastry cutter, for cutting the cold butter into the streusel
- Hand or stand mixer, for creaming the cake batter
- Small saucepan, for the caramel icing
Key Ingredients
Apple Filling
Honeycrisp or Granny Smith apples: I like a firmer, crisp apple here because it holds its shape as it bakes instead of turning to mush. Honeycrisp gives you a little more natural sweetness, while Granny Smith brings a nice tart contrast to the sweet cake and caramel.
Brown sugar, cinnamon, nutmeg, and allspice: this warm spice blend is what turns simple chopped apples into a cozy, fall-flavored filling. The allspice and nutmeg round out the cinnamon, so the filling tastes layered rather than one-note.
Streusel
Cold, cubed butter: The key to a thick, crumb streusel instead of a sandy one. Keeping the butter cold and chilling the mixture in the fridge before baking helps it hold its shape in the oven, so you get real crumbs on top.
Brown sugar and cinnamon: Brown sugar gives the streusel that deep, almost caramelized flavor, while the cinnamon ties it right back to the apple filling underneath.
Cake
Milk and white vinegar: combining these creates a quick homemade buttermilk substitute. Letting it sit until it curdles is completely normal and exactly what helps keep this cake soft and tender.
Softened butter and granulated sugar: creaming these together until light and fluffy is what gives the cake its light and soft texture, so don't rush this step.
Eggs and vanilla extract: Added after creaming; these help keep the cake moist and bind it together.
Caramel Icing
Butter and brown sugar: Melted and stirred together; these form the base of a simple stovetop caramel sauce.
Heavy cream: Added to the melted brown sugar mixture to thin it into a pourable icing after whisking with powdered sugar.

Step-By-Step Instructions
Preheat your oven to 350°F. Spray an 8x8-inch baking pan with non-stick spray and line it with parchment paper so the coffee cake lifts out once it's baked.
Start making the apple filling by adding the chopped apples to a small bowl along with the brown sugar, cinnamon, nutmeg, and allspice. Mix until the apples are evenly coated, then set the bowl aside.
Make the streusel by mixing the flour, brown sugar, cinnamon, and salt in a bowl. Add the cold, cubed butter and use a pastry cutter to work it into the flour mixture, turning the bowl as you go until you have pea-sized pieces of butter throughout. Don't overwork it; larger pieces of butter are what give you that nice, chunky crumb topping. Pop the bowl in the refrigerator so the butter stays cold until you're ready to use it. Warm butter will melt quickly leaving your top more like sand.

To make the batter, combine the milk and vinegar in a small bowl or measuring cup and let it sit while you prep the rest of the ingredients. It will curdle, and that's exactly what you want.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt, then set it aside.
In a separate large bowl, use a hand or stand mixer to cream the softened butter with the granulated sugar. Beat on high speed until light and fluffy, about 2 to 4 minutes.

Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
With the mixer on low, add half of the flour mixture and half of the milk mixture to the creamed butter, then repeat with the remaining flour and milk. Mix just until combined, and no streaks of flour remain.
Assemble the cake. Spread half of the cake batter into the prepared pan, using a spatula to smooth it into the corners. Add all of the apple filling on top of the batter, then sprinkle half of the streusel over the apples.
Spread the remaining cake batter over the apples and streusel, carefully smoothing it into an even layer with a spatula. Sprinkle the remaining streusel over the top.

Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool on a wire rack for at least 30 minutes before adding the icing.
Make the caramel icing. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and continue stirring until it melts smoothly into the butter.

Add 3 tablespoons of the heavy cream and keep stirring until the mixture begins to simmer. Once it's slightly bubbling, remove it from the heat and whisk in the powdered sugar and vanilla extract. Continue stirring until fully combined, adding a tablespoon of cream if the icing needs thinning.
Drizzle the caramel icing over the cooled coffee cake and serve.

Storage
Store leftover coffee cake in an airtight container at room temperature for up to 2 to 3 days. If you'd like it to last longer, keep it in the refrigerator for up to 5 days.

Expert Tips
- Cream the butter and sugar together for a full 2-3 minutes to get a soft texture cake.
- Make sure to keep the streusel crumb topping refrigerated until ready to use for the best texture.
- Sift the powdered sugar before adding to the butter for the caramel icing. Or you can always strain out any lumps if needed.

Caramel Icing
- 2 tablespoons unsalted butter
- ¼ cup brown sugar
- 3-4 tablespoons heavy cream
- ½ teaspoon vanilla extract
- ¾ cup powdered sugar, sifted
Instructions
- Preheat oven to 350℉. Spray an 8x8 inch baking pan with non-stick spray and line with parchment to easily remove the coffee cake from the pan.
Apple Filling
- Add the chopped apples to a small bowl with the brown sugar, cinnamon, nutmeg, allspice and flour. Mix to coat the apples and set aside.
Streusel
- Add the flour, brown sugar, cinnamon and salt to a bowl and mix well. Add the cold cubed butter to the bowl and use a pastry cutter to cut the butter into the flour mixture. Keep turning the bowl to work the butter into the flour until you have pea sized pieces. Do not over work as you want larger pieces of butter to form the crumb topping. Put this in the refrigerator so the butter stays cold and you get a nice crumb topping when this bakes.
Cake
- Combine the milk and vinegar together and let sit while preparing the other ingredients. The mixture will curdle but this is exactly what we want.
- Combine the flour, baking powder, baking soda and salt in a large bowl. Set aside.
- In a separate large bowl, use a hand or stand mixer to cream the room temperature butter with the sugar. Mix on high speed until light and fluffy for about 2-4 minutes.
- Add the eggs one at time to the creamed butter, beating well to combine. Add the vanilla extract.
- Mix in half of the flour along with half of the milk mixture into the creamed butter and then repeat with the remain flour and milk mixing until everything is just combined and no streaks of flour remain.
Assembling the Cake
- Add half of the cake batter to the prepared pan and use a spatula to smooth into the corners.
- Add all of the apples on top of the batter. Add half of the streusel mixture on top of the apples.
- Spread the remaining batter over the apples and streusel. Carefully smooth into an even layer using a spatula. Sprinkle the remaining streusel topping on top.
- Bake in a preheated oven for 45-50 minutes or until a toothpick comes out clean. Allow to cool on a wire cooling rack for at least 30 minutes before serving. Once the coffee cake has cooled add the glaze.
Glaze
- In a small pan melt the butter. Stir in the brown sugar and continue to stir until the sugar melts into the butter and is smooth.
- Add the 3 tablespoons of heavy cream and continue to stir until the mixture begins to simmer.
- When mixture is slightly bubbling remove from heat and whisk in the powdered sugar and vanilla. Continue to stir until combined and add the additional tablespoon of cream if needed. Drizzle glaze over the top of the coffee cake and serve.
