Apple Fritter Bread with Glaze

Cinnamon Sugar Mixture
- ⅓ cup light brown sugar
- 1 and ½ teaspoons cinnamon
Apple Mixture
- 2 large apples, peeled and chopped (I used Honeycrisp but Granny Smith is also a great choice)
- 2 tablespoons light brown sugar
- 1 teaspoons cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon allspice
Bread Loaf Recipe
- ¼ cup unsalted butter, softened
- ⅓ cup granulated sugar
- ⅓ cup light brown sugar, lightly packed
- ¼ cup neutral oil
- 2 large eggs
- 1 teaspoon vanilla bean paste, or extract
- 1 and ½ cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ⅓ cup milk
- ⅓ cup Greek yogurt, or sour cream
Glaze
- 2 tablespoons unsalted butter
- ¾ cup powdered sugar
- ½ teaspoon vanilla bean paste, or extract
- 2-3 tablspoons milk, until desired consistency is reached

Preheat oven to 350 ℉. Line a 9x5 loaf pan with parchment and spray with nonstick baking spray.
In a small bowl mix together the brown sugar and cinnamon. Set aside until you layer the loaf.
Peel and chop the apples into small pieces. Sprinkle with brown sugar, cinnamon, nutmeg and allspice. Set aside.
Bread Loaf
Add the butter and both types of sugar to a large mixing bowl and cream until fluffy. Slowly add the oil and continue to mix until combined. Add the eggs one at a time mixing well after each addition. Mix in the vanilla.
In a separate bowl mix together the flour, baking powder and salt.
Slowly add half of the flour mixture to the wet ingredients while mixing. Add in the milk and Greek yogurt, continuing to mix. Add the remaining flour mixture and mix until just combined and there are no visible streaks of flour.
Assembling The Bread
Add half of the bread batter in the prepared pan. Smooth into the corners the layer is smooth. Add half of the chopped apples on top of the batter. Sprinkle with half of the cinnamon sugar. Repeat the layers, by spreading the remaining batter, apples and finally the remaining cinnamon sugar.
Bake in the preheated oven for 50-55 minutes or until a toothpick comes out clean. Let cool for 10 minutes. Use the parchment and lift out of pan and cool on a wire rack.
Glaze
When bread has cooled make the glaze by melting 2 tablespoons of butter in a skillet or sauce pan over medium heat. Use a whisk to continuously stir the butter for several minutes until it begins to brown. Remove from heat and allow to cool for a few minutes. Stir in the powdered sugar, milk and vanilla. Add a tablespoon of milk at a time until the desired consistency is reached.
Slice and serve. Cake can be stored at room temperature for 1-2 days or in the refrigerator for up to 5 days.
