- 1 15.25 ounce box spice cake mix
- 1 15 ounce can pumpkin puree (not pumpkin pie filling)
- 1 large egg
- ¼ cup vegetable oil
- 1 cup chocolate chips

Preheat the oven to 350°F. Line a cookie sheet with parchment paper.
In a large mixing bowl add cake mix, pumpkin puree, egg and vegetable oil. Stir well until all dry streaks of cake mix are mixed in. Stir the chocolate chips into the batter.
Use a cookie scoop to portion out the cookies about 2 inches apart on the cookie sheet. I used a #40 cookie scoop which is about 1.6 tablespoons. This made 26 cookies. You can make these cookies bigger or smaller but remember to adjust the baking time.
Bake in the preheated oven for 10-12 minutes. The cookies should not be doughy in the center. Mine where perfect at 11 minutes.
Cool on the cookie sheet for a minute and then use a spatula to transfer the cookies to a wire rack to cool completely.
Store cookies at room temperature for 3-4 days or freeze for up to 3 months.
