Why You'll Love These Grilled Pork Chops!
This recipe is simple, flavorful, and practically foolproof once you know the tricks. Here's why it's a summer staple in my house:
- The marinade is a perfect balance of tangy, sweet, and savory, thanks to Worcestershire sauce, honey, and Dijon mustard.
- Bone-in chops stay extra juicy on the grill and are hard to overcook.
- It's a make-ahead-friendly recipe, so you can marinate the chops several hours before and just grill them when you're ready.
- Minimal ingredients, minimal cleanup, maximum flavor.

Equipment Needed
- An outdoor gas or charcoal grill works well for this recipe. These pork chops can also be cooked in a cast iron grill pan or regular cast iron skillet on the stovetop.
- A meat thermometer is the best way to make sure your pork chops are cooked through without drying them out.
- A mixing bowl or a resealable bag works well for marinating the chops.
Key Ingredients
Pork chops: I like bone-in, center-cut pork chops for this recipe. The bone helps keep the meat juicy while it grills, and center-cut chops cook up nice and tender.
Worcestershire sauce: Adds a deep, savory flavor to the marinade and helps tenderize the meat.
Olive oil: Helps carry the marinade's flavors and keeps the chops from sticking to the grill grates.
Honey: Adds a touch of sweetness and helps the chops get that beautiful caramelized char on the grill.
Lemon juice: Brightens the marinade and balances the sweetness of the honey.
Dijon mustard: Adds a little tang and helps the marinade cling to the chops.
Fresh minced garlic: Adds so much flavor. I always use fresh over jarred when I can.
Rosemary: This earthy herb pairs beautifully with pork and gives the marinade a slightly savory, aromatic flavor.
Salt and pepper: Are essential for seasoning the marinade and bringing all the flavors together.

Step-By-Step Instructions
In a mixing bowl, whisk together the Worcestershire sauce, olive oil, honey, lemon juice, Dijon mustard, garlic, rosemary, salt, and pepper.
Add the pork chops to the marinade, making sure they're well coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for even more flavor. Because of the lemon juice we do not want to over marinate.

When you're ready to cook, preheat your grill to 450°F. Make sure to clean the grates well and coat with oil to prevent the chops from sticking to the grill grates.
Remove the chops from the marinade and place them on the hot grill. Grill for 6 to 8 minutes per side, or until a meat thermometer inserted into the thickest part reads 145°F.
Let the chops rest for a few minutes before serving so all those juices stay locked in.

Serving Recommendations
Grilled pork chops pair perfectly with many different vegetables, slaws and salads. Here's a few of our favorites.
- Serve alongside grilled corn or a fresh fruit salad for the ultimate cookout plate.
- Pair with roasted potatoes or a simple rice for a heartier meal.
- Pineapple slaw, apple slaw or regular coleslaw are always great options!

Make Ahead
You can mix up the marinade and add the pork chops up to 4 hours in advance. This makes it easy to prep earlier, so all you have to do at dinner time is grill.

Storage
Store any leftover pork chops in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or the oven until warmed through.
