Pineapple Slaw
Ingredients
Slaw Dressing
- ¼ cup Greek yogurt
- ¼ cup mayonnaise
- 1 teaspoon sugar
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon lime zest
- 2 tablespoons lime juice
Pineapple Slaw
- 1 12 ounce bag slaw mix (green and or purple cabbage with carrots)
- 2 cups fresh pineapple, cut into small chunks
- ⅓ cup fresh cilantro, chopped
Instructions
- Add the dressing ingredients to a small mixing bowl and whisk together until combined. If you prefer your dressing to be a thinner consistency you can add additional lime juice or a splash of milk.
- Add the slaw mix, pineapple and cilantro to a large mixing bowl. Add the slaw dressing to the mixture and stir well with a spoon to combine.
- Transfer to a serving bowl and serve right away or chill for an hour before serving.
