    This recipe is quick and easy to prepare, making it an excellent side dish even at the last minute. It is also easy to pair with other dishes, adding flavors and texture depending on how you serve it.

    Combine the slaw mixed vegetables (carrots, green cabbage, purple cabbage), fresh pineapples, and cilantro in a large mixing bowl.

    Pour the dressing into the slaw mixture. Use the wooden spoon until the dressing is well-coated. Salt and pepper to taste. And that's all there is to this slaw recipe! Simple, tasty and super easy!

    Make-Ahead

The dressing could be made a day before as long as you store it in the refrigerator in an airtight container.

    Storage

    If any leftovers from the batch remain, you can store the pineapple slaw in an airtight container in the fridge for up to two days. Remember that the cabbage may soften or lose their crispiness. It is best to enjoy it just a few hours after making it.

    Ingredients

    Slaw Dressing

    • ¼ cup Greek yogurt
    • ¼ cup mayonnaise
    • 1 teaspoon sugar
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • 1 teaspoon lime zest
    • 2 tablespoons lime juice

    Pineapple Slaw

    • 1 12 ounce bag slaw mix (green and or purple cabbage with carrots)
    • 2 cups fresh pineapple, cut into small chunks
    • ⅓ cup fresh cilantro, chopped

    Instructions

    • Add the dressing ingredients to a small mixing bowl and whisk together until combined. If you prefer your dressing to be a thinner consistency you can add additional lime juice or a splash of milk.
    • Add the slaw mix, pineapple and cilantro to a large mixing bowl. Add the slaw dressing to the mixture and stir well with a spoon to combine.
    • Transfer to a serving bowl and serve right away or chill for an hour before serving.
