Ingredients
- 1 tablespoon butter
- 1 clove garlic, minced
- 1 cup long-grain white rice or jasmine rice, rinsed
- 2 cups chicken broth, or water *see notes
- zest and juice of 1 lime
- ⅓ cup cilantro
- salt to taste
Instructions
- Add butter to a medium sized sauce pan over low heat. Once melted add garlic and sauté for 60 seconds or until garlic becomes fragrant. Do not burn.
- Add the rice and toast for another 60 seconds. Add in the chicken broth (or water). Bring the pot up to a boil and then turn the heat back down to simmer. Cover and cook for 15 minutes or until the liquid has absorbed and the rice is tender.
- Zest and juice the lime into the rice. Add the cilantro and salt if desired. Stir well and serve.
