    Add the salmon fillet cubes, olive oil, brown sugar, paprika, garlic powder, onion powder, salt, and pepper to a bowl. Gently stir until the salmon is evenly coated.

    Spread the salmon bites onto the prepared baking sheet, making sure they are evenly spaced.

    Bake for 8 minutes until the salmon is mostly cooked through.

    Ingredients

    Salmon Bites

    • 1.25 pounds salmon fillets, cut into 1 inch cubes *see notes
    • 2 tablespoons olive oil
    • 2 teaspoons brown sugar
    • 1 teaspoon paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • sesame seeds, garnish optional
    • cilantro, garnish optional

    Bang Bang Sauce

    • ½ cup mayonnaise
    • 2 tablespoons chili sauce
    • ½ teaspoon soy sauce
    • ½ teaspoon Sriracha sauce
    • 1 teaspoon fresh lime juice

    Instructions

    • Preheat oven to 425℉. Line a rimmed baking tray with aluminum foil and lightly spray with nonstick spray.
    • Add the salmon pieces, olive oil, brown sugar, paprika, garlic powder, onion powder, salt and pepper to a bowl. Stir gently to completely coat the salmon with the spices.
    • Spread the salmon bites onto the foil lined tray so they are evenly spaced out. Place the salmon in the oven to bake for 8 minutes.
    • While the salmon is baking mix the bang bang sauce ingredients in a small bowl.
    • When the salmon has cooked for 8 minutes it will be mostly cooked through. Turn the oven to the broiler setting and place the salmon on the top rack position. Broil for 2 minutes to crisp the salmon.
    • Serve the salmon with bang bang sauce as an appetizer or serve with rice and a cucumber salad to make salmon bowls.
