Cilantro Lime Rice

Ingredients

  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 1 cup long-grain white rice or jasmine rice, rinsed
  • 2 cups chicken broth, or water *see notes
  • zest and juice of 1 lime
  • cup cilantro
  • salt to taste

Instructions

  • Add butter to a medium sized sauce pan over low heat. Once melted add garlic and sauté for 60 seconds or until garlic becomes fragrant. Do not burn.
  • Add the rice and toast for another 60 seconds. Add in the chicken broth (or water). Bring the pot up to a boil and then turn the heat back down to simmer. Cover and cook for 15 minutes or until the liquid has absorbed and the rice is tender.
  • Zest and juice the lime into the rice. Add the cilantro and salt if desired. Stir well and serve.

Notes

Chipotle does not use chicken broth in their recipe, but I find it adds lot of flavor.  If you want to keep this dish vegetarian simple use equal amounts of water instead.
