    Why These Coconut Milk Overnight Oats Are The Best!

    I am a huge fan of oatmeal and have been eating it for breakfast for over 20 years. It makes a fantastic breakfast with whole grains and nutrients that are proven to reduce blood pressure, aid in weight loss and reduce the risk of heart disease.

    Of course eating the same breakfast everyday would get kind of boring which is why I make so many different flavor combinations of overnight oats. My husband's favorite is overnight protein oats which has extra protein added with a few scoops of vanilla protein powder. I love my overnight oats with cinnamon but also the strawberry oats with the creamy texture and lots of fresh strawberries!

    I thought using tropical fruits with the coconut milk would make a fun flavor combination, sort of a pina colada version of overnight oats. No matter what your favorite toppings are the oats are perfect for meal prep and anyone following a vegan diet.

    Equipment Needed

    mason jars- or any other airtight container.

    Key Ingredients

    old-fashioned oats- or called rolled oats which are less processed than quick oats or instant oats. I prefer the texture of old-fashioned oats in my overnight oat recipes. Steel cut oats are even less processed and would be too firm in this recipe.

    coconut milk- I like to use the lite coconut milk to cut down on a few calories, but to make this even creamier you can opt for the full-fat coconut milk. There is also coconut cream which is even thicker than the coconut milk and would make this more of a dessert recipe! Just make sure you look for the canned varieties. You can find these in your local grocery store.

    Step-By-Step Instructions

    In a large mixing bowl, add coconut milk, agave syrup and salt and stir well. Mix oats and chia seeds with the milk mixture.

    Spoon half of the oat mixture into small glass jars. Mason jars are perfect for overnight oats but any airtight container will work. Add a tablespoon of chopped pineapple and then layer with remaining oats. Top oats with another tablespoon of pineapple and a maraschino cherry. The cherry is completely optional but goes along with the pina colada vibe of this coconut milk overnight oats recipe.

    The key to overnight oats is to let them sit for at least 4 hours or overnight in the refrigerator so that they can absorb the milk and the oats soften. If using mason jars, seal jars and store overnight for the perfect grab and go breakfast the next morning.

    Storage Recommendations

    After you have divided the oat mixture between the individual jars, store the overnight oats in the refrigerator for up to 5 days.

    Substitutions and Additions

    pineapple- you can use any fresh fruit in this overnight oats recipe. Fresh blueberries or strawberries are always a favorite of mine in oatmeal. Use your favorite fruits.

    agave syrup- is a great option if you are wanting a vegan sweetener. Pure maple syrup or brown sugar are also a great choice. Use your sweetener of choice in this oatmeal recipe.

    light coconut milk- I keep this a healthy breakfast by using the lite milk but you can use the full fat coconut milk if you prefer the flavor.

    Coconut Milk Overnight Oats

    Equipment

    • mason jars

    Ingredients

    • 1 can coconut milk (I used lite)
    • 3 tablespoons agave syrup
    • ¼ teaspoon salt
    • 2 cups old-fashion oats
    • 1 tablespoon chia seeds
    • ½ cup pineapple, chopped
    • maraschino cherries for garnish, optional

    Instructions

    • Add coconut milk and agave syrup to a large mixing bowl. Stir a whisk to stir.
    • Combine the oats, chia seeds and salt to the milk mixture. Stir the oats into the milk so they can begin to soften.
    • Divide half of the mixture into the mason jars. Add a tablespoon of finely chopped pineapple to the oats. Continue filling the jars the rest of the way with the oat mixture.
    • Top the oats with another tablespoon of oats and a maraschino cherry.
    • Seal the jars and store in the refrigerator for at least 4 hours or overnight before eating. For meal prep these will last for up to 5 days.
