- 1 can coconut milk (I used lite)
- 3 tablespoons agave syrup
- ¼ teaspoon salt
- 2 cups old-fashion oats
- 1 tablespoon chia seeds
- ½ cup pineapple, chopped
- maraschino cherries for garnish, optional
Add coconut milk and agave syrup to a large mixing bowl. Stir a whisk to stir.
Combine the oats, chia seeds and salt to the milk mixture. Stir the oats into the milk so they can begin to soften.
Divide half of the mixture into the mason jars. Add a tablespoon of finely chopped pineapple to the oats. Continue filling the jars the rest of the way with the oat mixture.
Top the oats with another tablespoon of oats and a maraschino cherry.
Seal the jars and store in the refrigerator for at least 4 hours or overnight before eating. For meal prep these will last for up to 5 days.
