But of course I try to eat more mindfully and indulge my sweet tooth only on occasion which is why this apple pie oatmeal recipe is my new favorite. Apple pie oats have all the apple pie flavor with the creamy texture of oats while still remaining a nutritious breakfast!

    The apple chunks have that perfect apple cinnamon flavor giving the taste experience of a creamy apple pie! This is a delicious breakfast and a great way to start the day!

    I love overnight oat recipes because they are the perfect make-ahead breakfast. The beauty of overnight oats is that you can prep these the night before so the next day they are ready to eat. This is a must for busy mornings so you have breakfast ready to literally grab-and-go!

    Equipment Needed

    mason jars- a glass jar or a mason jar is the best way to store overnight oats.

    Key Ingredients

    apple- we love Honeycrisp apples but feel free to use any baking apple like Granny Smith, Golden Delicious or Pink Lady.

    old fashion oats- also called rolled oats are the preferred type of oat for overnight oats.

    The ingredients to make apple pie overnight oats: apples. walnuts. chia seeds, oats, vanilla extract, honey, spices, apple sauce & milk.

    Step-By-Step Instructions

    Start by chopping the apple into small bite sized pieces. I like to leave the peel on but you can peel the apple if you prefer.

    Add the diced apple to a skillet over medium low heat. Sprinkle with half of the spices and 2 teaspoons of honey.

    Cook the apples for 8-10 minutes or until they are softened. Set the cooked apples aside to cool while making the overnight oat mixture.

    Add almond milk, apple sauce, vanilla extract, the remaining honey and spices to a large mixing bowl. Stir to combine. Add the oats, chia seeds and half of the apples leaving the remaining apple pieces for garnish. Stir to combine and the oats will begin to soften and soak up the milk.

    Divide the apple mixture into 3-4 individual glass jars. I love mason jars for overnight oats, but any sealable container will work. Place overnight apple oats in the refrigerator for at least 4 hours or preferably overnight.

    Storage

    Store overnight oats in an airtight container in the refrigerator for up to 5 days.

    How Long Are Overnight Oats Good For?

    Overnight oats will stay fresh in the refrigerator for up to 5 days making them perfect for meal prep. Make a big batch at the beginning of the week to have breakfast ready to go!

    Substitutions And Additions

    honey- you can also use pure maple syrup or agave syrup for a touch of sweetness.

    apples- there are many types of apples that work well for this recipe, just make sure to use a fresh crisp apple so that it holds its texture well when cooked.

    almond milk- is the type of milk I keep on hand but you can use any type of non-dairy milk or dairy milk that you prefer. Oat milk, coconut milk or soy milk are also good options.

    protein powder- you can add a vanilla protein powder for a little extra protein.

    walnuts- this is completely optional. You can use any other type of nut or leave them out all together.

    peanut butter- and apples are always a great combination. Feel free to drizzle a teaspoon over the top.

    Can You Heat Up Overnight Oats?

    Overnight oats are meant to be eaten cold but they can always be warmed in the microwave. Microwave for 60-90 seconds or until heated through.

    Can I Use Quick Oats For Overnight Oats?

    Yes, you can use quick oats for overnight oats, however the texture will be less chewy. Quick oats are more processed than old fashioned oats so that they cook faster. Because of this quick oats will absorb the liquid faster and have a softer texture.

    Can You Freeze Overnight Oats?

    Yes! Overnight oats can be frozen with a few simple tips. Make sure to prepare them in a freezer safe container and place them in the freezer right away, rather than having them soak first.

    Then when ready to thaw transfer the oats from the freezer to the refrigerator the night before so they can be thawed by the next morning.

    • 1 large apple, diced
    • 4 teaspoons honey or maple syrup
    • ½ teaspoon cinnamon
    • ⅛ teaspoon nutmeg
    • ⅛ teaspoon cardamon
    • 1 tablespoon water
    • 1 and ½ cups almond milk
    • ½ cup applesauce, unsweetened
    • 1 teaspoon vanilla extract
    • 2 cups old fashioned oats
    • 1 tablespoon chia seeds
    • 2 tablespoons walnuts, chopped

    Instructions

    • Heat a small skillet over medium heat. Add the diced apple, 2 teaspoons of honey, water and half of the spices to the skillet. Cook the apples for 8-10 minutes or until the apple has softened. Stir occasionally. Set aside to cool when finished cooking.
    • In a large mixing bowl add the almond milk, remaining honey, remaining spices, applesauce, and vanilla extract. Stir well to combine.
    • Add the oats, chia seeds and half of the cooked apples to the almond milk mixture and stir well.
    • Portion the oat mixture into 3-4 mason jars or other sealable containers. Top with remaining apples and chopped walnuts. Place the overnight oats in the refrigerator for 4 hours or preferably overnight before eating. The oats will stay fresh for up to 5 days.
