I love salmon and it is easily my favorite fish to cook.  It’s healthy, flavorful and can be made in so many different ways.  I’ve made everything from salmon cakes to grilled salmon just to mention a few of my all time favorite salmon recipes.

This Moroccan Spiced Salmon recipe is the ultimate week night meal and here’s why. When I get home from work I’m usually exhausted and can’t think about a complicated recipe.  Also my husband does not want lots of dishes to wash!  But we want a healthy meal that both of us love.  That’s why this easy spice rub for salmon is perfect.  I can make the entire meal in about 15 minutes and that’s even with a few side dishes (I have no shame admitting I rely on microwave frozen veggies for my sides on a hectic night)!  Then you crumple the foil and throw it away so there's no scrubbing of dished involved!

Which spices go well with salmon?

Salmon has a more pronounced flavor than a white fish.  It can handle stronger flavors and spices which is why I love using spice rubs on salmon fillets.  This Moroccan rub uses a spice blend with four of the common spices found in every Moroccan kitchen, turmeric, salt, pepper and ginger.  I added brown sugar which may not be used in traditional Moroccan cooking but I like how the sugar caramelizes with the rub and creates a wonderful crust on the fish.  It also has a great sweet contrast with the spices.

Spice Rub INGREDIENTS for Moroccan Spiced Salmon

  • brown sugar
  • ginger
  • paprika
  • turmeric
  • black pepper
  • garlic powder
  • coriander
  • cinnamon

These are typical spices used in Moroccan cooking.  I like to double the recipe and keep extra in an airtight container for the next time I want to make Moroccan Spiced Salmon.  It is also delicious on chicken!

What is the healthiest way to cook salmon?

There are many ways to cook salmon.  One of my favorite ways that is extremely healthy, is to broil in the oven.  Salmon is already high in fat so it doesn’t require any extra butter or oil to cook.  It will get an amazing crust just by placing under the broiler.  Also salmon does not need to be flipped in the oven during the cooking process making it a quick and easy dinner.

Tips for Broiling salmon

  • never use glass dishes under high heat
  • line baking tray with aluminum foil
  • place salmon with rub directly under broiler
  • watch closely

Cooking salmon under a broiler is easy, however it is important to follow these steps.  I have had a glass dish explode in the oven and trust me it's not a fun mess to clean up!  When you cook on a foil lined baking sheet it is the easiest dinner to clean up because all you do is fold up the foil and throw it away.Salmon on foil lined baking sheet with Moroccan spice rub

Cooking under the broiler is using the highest heat your oven can produce-about 525 degrees depending on the model.  This means you need to time it for about 7 minutes and keep your eye on the oven.  I will check the thickest part of the fillet with a fork to see if it flakes and if there is no longer any pink in the center.  If it needs a few more minutes I’ll stick it back under the broiler and time for 2 more minutes.

You never want to walk out of the kitchen when using the broiler because it can go from perfect to charred in seconds.  Don't be nervous to give the broiler a try!  Check this out if you need more tips for using the broiler.
