fresh ginger- is the root of a flowering plant that is used as a spice. Fresh grated ginger is delicious in this recipe and is found in the produce section of most grocery stores.
sweet chili sauce- is a sweet and spicy condiment that is popular in Asian cuisine. It is sold in most grocery stores.
rice vinegar- is a milder sweeter vinegar that is popular in Asian cuisine.
Is salmon healthy?
Salmon has so many health benefits. It is very high in protein which is one reason why I try to eat it at least once a week. Salmon also is a great source of omega-3 fatty acids. These are the good fats that are needed in your diet.
How do you cook Salmon in the oven?
There are so many different methods for cooking salmon. When I’m trying to cook a quick meal the broiler feature in my oven comes in handy. If you’ve never used this feature you will love how quickly it can cook your food and the great crispy texture it produces. It’s the closest thing to grilling in your house, so on those days when it’s raining or too cold, try the broiler! Make sure to read through my tips because it is a little different from your regular oven settings.
How to use the broiler function in your oven?
First check to see where your broiler coil is located on your oven. It’s usually in the top of an oven but sometimes on older models it is located in a bottom drawer. Before you put the food in oven allow the broiler to preheat for about 5 minutes. Always use the right type of cookware under a broiler. Never use glass because it can break under high heat! The best options are uncoated metal pans or cast iron skillets.
Then when you put your food in the oven you need to watch it closely. The broiler reaches about 500 degrees so your food can go from perfectly brown to scorched in seconds. I keep the oven door cracked so I can keep my eyes on it and I rotate my cooking tray throughout the cooking time to insure it gets evenly browned.
How To Broil Salmon?
First, line a metal baking sheet with foil. This will make your clean up a breeze! Next, place your 4 pieces of salmon on baking sheet and sprinkle with salt and pepper. Due to the flavorful orange ginger sauce the salmon doesn’t need anything else. So that’s it, you’re ready for the broiler!
how to tell if salmon is cooked?
What I love about cooking salmon under the broiler is that that the fish only takes 7-8 minutes! When you remove the salmon from the broiler, you will be amazed at how nice and crispy the salmon is on the outside and perfectly cooked in the center. To tell if salmon is cooked insert a knife into the thickest part of fillet and see if it is pink in color or still red and raw. Salmon will flake easily when cooked. You can also test with a meat thermometer. There is a bit of debate over what the perfect internal temperature should be. Some feel that fully cooked is 145 degrees while others say it is over cooked at that temperature. Since I like my salmon fully cooked with no red center, my preferred method is looking at the color rather than temperature.

What is Jasmine Rice?
Jasmine rice is a long grain rice grown primarily in Thailand. Because of its sweet aroma and great texture, I prefer jasmine rice. It doesn’t need much added to it which is why I just add a small amount of olive oil to help keep it from sticking together too much. Plus the rice soaks up the delicious orange ginger sauce.
How to make Orange ginger sauce
The orange ginger sauce is perfect for salmon. It is slightly sweet and spicy with a great orange flavor. What I love about this recipe is that you don’t need a huge list of ingredients to make something really flavorful. Just a few staples and fresh oranges turn a simple piece of fish into a special dinner. Mix together honey, rice vinegar, sweet chili sauce, orange juice and corn starch.
Peel and segment the orange and leave it to toss into sauce after it is mixed together and simmering on the stove. The addition of corn starch will thicken the sauce. Continuously, stir sauce until thickened and pour over salmon and rice.

Orange Ginger Salmon with Jasmin Rice
Ingredients
Salmon
- 4 6 ounce salmon fillets
- 1 cup orange juice
- 1 cup orange slices (1 large orange)
- 1 teaspoon orange zest
- 1 tablespoon honey
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon corn starch
- 1 tablespoons rice vinegar
- 2 tablespoons sweet chili sauce
Jasmine Rice
- 1 cup jasmine rice
- 1 teaspoon olive oil
- 1 teaspoon ginger, grated
- 1 tablespoon cilantro, minced
Instructions
- Bring water to boil in small sauce pan. Once water is boiling add rice and cover. Turn to simmer for about 15 minutes.
- Preheat broiler to high heat for 5 minutes. Place salmon on foil lined metal tray. Sprinkle with salt and pepper and place under broiler. Rack must be in top position. Time for 7-8 minutes.
- Heat non stick skillet to med high heat with 1 teaspoon of olive oil.
- Zest 1 teaspoon from orange. Cut 1 orange into slices. Juice other oranges.
- Combine orange zest, garlic and ginger and add to heated skillet. Stir continuously for 1 minute.
- In a small bowl combine orange juice, honey, sweet chili sauce, rice wine vinegar and corn starch.
- Add orange juice mixture and orange slices to skillet, stirring till slightly thickened.
- When salmon is cooked it will flake easily with fork, or meat themometer reaches degrees.
- When water is absorbed in rice add grated ginger, olive oil and cilantro.
- Divide rice between 4 plates. Place salmon on top of rice, spoon oranges and sauce over top.
