How to cook SPAGHETTI squash
I’ve cooked spaghetti squash in both the oven and the microwave. The end result is perfect strands of squash. If your short on time or don’t want to heat up your oven give the microwave a try. I’ve included directions for both options!
How to cook spaghetti squash in the oven
Preheat your oven to 400 degrees. Line a baking tray with foil. With a sharp knife cut off stem end of squash and cut squash in half lengthwise. Remove the seeds and drizzle with olive oil and salt and pepper.
Place the squash cut side down on your foil lined baking sheet and bake for 35-40 minutes until squash is fork tender. Use a fork to loosen the strands from the outer peel.

Cooking spaghetti squash in the microwave is much quicker than roasting in the oven and still gives great results. The squash cooks in about 15 minutes so you can put together this restaurant quality dinner in no time!
Here’s my step by step instructions for cooking spaghetti squash in the microwave. First wash the squash. Next cut off the stem end off and then cut through squash lengthwise. Spaghetti squash has seeds inside so just scrape them out with a spoon. Just be careful to not scrape out the strands of “spaghetti.” Drizzle with a tablespoon of olive oil and dash of salt and pepper.
Place the squash cut side down on a microwave safe dish that fits in your microwave. For example I used my Pyrex glass pie plate. The squash didn't fit exactly but close enough. Then to cover them, I used Saran Wrap because believe it or not it's microwave safe. Just be sure to leave a small opening to allow steam to escape. Then place them in the microwave for 15 minutes on high and you'll have perfect strands of spaghetti squash. Be very careful removing the dish from the microwave because it will be extremely hot.
How to cook salmon in a skillet?
You can prepare salmon many different ways but for this salmon spaghetti squash recipe I pan seared the salmon. Then I use the same skillet for the white wine sauce.
First warm up your large non-stick skillet on medium high heat. Sprinkle the 4 salmon fillets with salt and pepper. When your skillet is hot add the oil and butter.
Wait until your oil and butter is very hot so your salmon starts to sizzle as soon as you set it in the pan. You never want to put meat of any kind into a skillet with just warm oil. The meat will soak up the oil and become greasy. Using tongs carefully flip over the salmon. It will take about 3 minutes per side to cook. I always cook salmon until it flakes easily with a fork and no longer has a pink center. Remove the salmon to a plate, cover to keep warm and start on your sauce.
Making a white wine sauce for salmon
Salmon with a white wine sauce is such an elegant dinner entrée that you might think it's only a treat when going out to a high-end restaurant. Surprisingly white wine sauce is very easy and only takes a few ingredients.
After you remove the salmon from your skillet it is time to start your sauce. Cook the shallot and the garlic in the skillet. Add the wine and simmer to reduce for 5-6 minutes. Add heavy cream and lemon juice and continue to cook until slightly thickened. Return salmon to skillet to warm through while spooning sauce over top.
Plate spaghetti squash with salmon and spoon sauce over top. Garnish with fresh parsley.

Salmon with Spaghetti Squash
Ingredients
Salmon with Sauce
- 4 4-6 ounce salmon fillets
- 1 Shallot, thinly sliced
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon butter
- ¼ cup white wine
- 2 teaspoons lemon juice
- ½ cup heavy cream
- 2 tablespoons chopped fresh parsley
Spaghetti Squash
- 1 tablespoon olive oil
- salt
- pepper
Instructions
- Prepare squash by washing and chopping in half lengthwise. Scrap out seeds with a spoon being careful not to scrap out too much of the actual spaghetti strands. Place on microwave safe dish cut side down. Cover with saran wrap and keep end open to vent. Microwave for 15 minutes on high.
- Heat a large non stick skillet over medium high heat.
- When skillet is warm add salmon and cook for 2-3 minutes per side or until lightly browned on each side. Use tongs to gently flip. Salmon will flake easily when finished.
- When salmon is cooked through remove from skillet and set aside.
- In the same skillet add shallot cooking for 1 minute stirring constantly. Add garlic and cook an additional 30 seconds.
- Pour in wine stirring to scrap up any browned bits in the bottom of the pan. Bring to a boil to then reduce heat to simmer for 5-6 minutes.
- Add heavy cream and lemon juice and continue to stir until it slightly thickens. Return salmon to pan to warm back up, spooning sauce over top.
- When squash is finished, use a fork to scrap the strands from the inside. Divide spaghetti onto plates and place salmon fillet on top of squash. Spoon sauce on salmon and spaghetti. Sprinkle with parsley and enjoy!
