- 1 English cucumber, sliced in thin slices
- 8 slices hearty white bread
Instructions
- In a large bowl, use an electric mixer to beat the cream cheese and heavy cream together until smooth.
- Add the honey, lemon zest and lemon juice and mix to combine. Use a spatula to mix in the mint.
- Spread a thin layer of cream cheese on 1 side of bread, top with the sliced cucumbers. Add a layer of cream cheese to the other slice of bread and place that on top. By adding cream cheese to both sides that helps create a barrier to keep the cucumbers from making the bread soggy.
- You can cut the crust of and cut the sandwiches into squares or triangles. Plate the sandwiches on a platter to serve.
