Cucumber Sandwiches

These cucumber sandwiches are one of my favorite recipes for afternoon snacks, tea parties, light lunches, or casual gatherings. They come together quickly but always feel a little special, making them perfect for sharing with friends and family all season long.

Ingredients

  • 8 ounces cream cheese
  • 1 tablespoon heavy cream or milk
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh mint leaves, chopped
  • 1 English cucumber, sliced in thin slices
  • 8 slices hearty white bread

Instructions

  • In a large bowl, use an electric mixer to beat the cream cheese and heavy cream together until smooth.
  • Add the honey, lemon zest and lemon juice and mix to combine. Use a spatula to mix in the mint.
  • Spread a thin layer of cream cheese on 1 side of bread, top with the sliced cucumbers. Add a layer of cream cheese to the other slice of bread and place that on top. By adding cream cheese to both sides that helps create a barrier to keep the cucumbers from making the bread soggy.
  • You can cut the crust of and cut the sandwiches into squares or triangles. Plate the sandwiches on a platter to serve.
