Tater Tot Breakfast Casserole
Ingredients
- 5 slices bacon, cooked and crumbled
- 1 package Frozen tater tots
- 10 large eggs
- 2 cups grated cheddar cheese
- ½ cup sour cream
- ½ cup half and half
- salt and pepper, to taste
- parsley, chopped for garnish (optional)
Instructions
- Preheat oven to 350° F. Spray a 9x13 casserole dish with cooking spray.
- Line up the tater tots in even rows to cover the bottom of the casserole dish.
- In a large mixing crack all eggs and whisk well. Add the half and half, sour cream, salt and pepper to the eggs and whisk to combine.
- Pour the egg mixture over the tater tots. Sprinkle the cooked bacon and cheddar cheese over the top of the eggs.
- Place the casserole dish in the preheated oven and bake for 40-45 minutes or until the eggs are set.
