Try this yogurt parfait recipe to make mornings easier and a little sweeter!

    Equipment Needed

    • Parfait glasses, glass cups, or small-sized mason jars
    • Knife
    • Cutting board
    • Mixing bowls
    • Spoon for layering

    Key Ingredients

Strawberries—Choose fresh, sweet, and juicy strawberries. Follow my tips to bring out the juices by macerating the strawberries - I promise it is one quick easy step that really makes all the difference.

Sugar: Two tablespoons can draw out the strawberries' natural juice.

Lemon juice: It adds a hint of tanginess and brightness.

Plain Greek yogurt: It is the source of the parfait's creaminess. I prefer to use whole milk yogurt because it is more rich and creamy than non-fat but either works.

Honey - Adds natural sweetness to the parfait.

Blueberries - Adds a pop of color and sweetness.

Granola - Adds a layer of crunchiness and nutty flavor to balance the parfait's creaminess.

Ingredients for the Homemade Yogurt Parfait with Berries: honey, strawberries, blueberries, granola, lemon halved, sugar & Greek Yogurt.

    Step-By-Step Instructions

Wash the strawberries thoroughly, hull and slice them as evenly as possible, and place them in a bowl with lemon juice and sugar. Stir them until all the strawberry pieces are coated with lemon juice and sugar, and rest them for 30 minutes until they draw out natural juices. This process is call macerating and it is optional, although I do recommend it.

chopped fresh strawberries on the chopping board and fresh strawberries with sugar and lemon on a bowl.

Next begin layering your parfaits by placing a spoonful of Greek yogurt in the bottom of each glass and drizzling with honey.

Add a layer of macerated strawberries on top of Greek yogurt and a few blueberries.

Sprinkle a layer of granola on top of the berries.

Repeat the process by layering yogurt, berries, and granola until your parfait glass is full.

You can refrigerate them or serve them immediately.

    Make Ahead

This Greek yogurt parfait is an excellent meal prep idea. You can assemble them using mason jars or airtight containers and store them in the refrigerator for up to 3 days. The granola will soften, but the taste is still delicious. You can add the granola to the top before serving if you want it crunchy.

    Storage

If you have leftovers, store the yogurt parfaits in the fridge using sealed or airtight containers. If the parfaits are made ahead, you may store the granola in a separate container to maintain its crunchiness. These Greek yogurt parfaits are best enjoyed in 1 to 3 days.

    Ingredients

    • 1 pound strawberries- washed, hulled and sliced
    • 2 tablespoons sugar
    • 1 teaspoon lemon juice
    • 2 cups plain Greek yogurt, I used whole milk
    • 1 tablespoon honey (can use more or less depending on sweetness)
    • ⅓ cup blueberries, washed
    • 1 cup granola

    Instructions

    • Wash, hull and slice the strawberries. Add them to a bowl and sprinkle with sugar and a teaspoon of lemon juice. Let the berries macerate to draw the juices out while preparing the other ingredients. *See notes
    • Place a few spoonfuls of yogurt in the bottom of each parfait glass. Drizzle with a bit of honey.
    • Spoon a few strawberries over the yogurt and sprinkle in a few blueberries.
    • Next add a layer of granola. Repeat the layers until all of the cups are filled.
    • Serve right away or cover with an airtight container and refrigerate for up to 3 days. The granola will soften over time.

    Notes

Macerating the strawberries is completely optional.  I love how it draws out the juices and makes the berries sweet and syrupy but if you are short on time you can skip this step.
