    I wanted to come up with a recipe that was not only simple to make but comforting and full of flavor. This crescent roll breakfast casserole recipe is exactly that. It has quickly become one of my favorite weekend breakfast ideas, and while it’s perfect as it is, I have also suggested some amazing ways to add to this recipe later in this post. Buttery crescent rolls with delicious egg and sausage make this a delicious breakfast casserole that you and your family will enjoy. 

    Whether it is brunch for the masses or something comforting and delicious for the family this breakfast casserole is tasty and satisfying. You can prep ahead of time, then pop in the oven, and know that you have something delicious to enjoy. Sausage, fluffy eggs, and cheese are just a combination of ingredients that are perfect for the morning. Eat this first thing or as a lazy brunch, it is perfect for all occasions.

    Equipment Needed

    • Casserole dish or baking dish
    • Non-stick cooking spray
    • Large skillet
    • Mixing bowl

    Key Ingredients

    Crescent rolls - You can use the original Pillsbury crescent rolls or now they make a crescent sheet which is what I used for the recipe. Buy it in your local grocery store. 

    Breakfast sausage - This has added flavorings but you can also use any other pork sausage meat you like. 

    Garlic - I like to add minced garlic as I think it enhances that savory flavor. 

    Italian seasoning - A great way to elevate the flavors and works so well with the breakfast sausage, egg and cheese. 

    Shredded cheddar cheese - This adds a level of creaminess and saltiness to this breakfast casserole recipe. 

    Mozzarella cheese - A great way to add additional flavor and mozzarella is a great melty cheese. Other shredded cheeses also work well. 

    Eggs - Eggs are a great way to add extra protein and are a breakfast staple. 

    Half and half or milk - This helps to combine and bring everything together. 

    Salt and black pepper - Add this seasoning to taste.

    Ingredients for Easy Crescent Roll Breakfast Casserole With Sausage: mozzarella, salt & pepper, parsley, crescent rolls, half & half, cheddar, sausage, garlic, & Italian seasonings.

    Step-By-Step Instructions

    Preheat oven to 375° F. Spray a 13x9 inch casserole dish with cooking spray.

    Unroll the crescent roll sheet or rolls and lay them flat in the bottom of the greased casserole dish.

    Bake in the preheated oven for 6 minutes.

    Meanwhile, cook sausage in a skillet until browned and cooked through. Use a spatula or spoon to break up the sausage into small pieces.

    Drain off excess fat from sausage. Add minced garlic and sauté for 30 seconds. Season with Italian seasonings.

    Crack the eggs into a large bowl and use a whisk to beat the eggs. Whisk in the milk and season with salt and pepper.

    Add the cooked sausage over the crescent roll dough.

    Next, sprinkle 1 cup cheddar cheese and the mozzarella over the sausage. Pour the egg mixture over the cheese and sausage. Sprinkle with remaining cheddar cheese.

    Bake the casserole in the preheated oven for 35-40 minutes or until the eggs are set and no longer jiggly.

    Let the casserole cool for 5 minutes before slicing and serving. Garnish with fresh parsley if desired.

    Substitutions And Additions

    • Add different ingredients - This casserole is so versatile. Try adding turkey sausage, ham or cooked crispy bacon. You could also add some tomatoes, green peppers, onions or mushrooms.
    • Spice things up - Add some chopped red chili, chili flakes, or even some chili powder. 
    • Seasonings - You could also add some mixed herbs, onion powder, or garlic powder to this dish. 
    • Cheese - Use whatever cheese you like. I love good melty cheeses like Monterey jack, gruyere and Colby.

    Make Ahead

    You can totally make this ahead which is perfect if you are hosting a brunch or plan on making this for a special occasion. You can prepare the whole breakfast casserole up to baking a day before. Store the unbaked casserole in the refrigerator and then bake in the oven for 35-40 minutes when you are ready. Remember to bring the casserole dish to room temperature before sticking in the hot oven.

    Storage

    This crescent roll breakfast bake recipe can be enjoyed as leftovers. Simply let any leftovers cool completely then store in an airtight container or cover tightly with plastic wrap. Store in the refrigerator for 3-4 days. 

    Reheating is simple. Just pop a slice of the casserole into the microwave for 30 seconds and Voila! Breakfast is ready. 

    You can reheat the entire baked casserole in the oven at 350 for 25 minutes. Cover with aluminum foil to prevent it from over browning or drying out.

    How Do You Know The Sausage Breakfast Casserole Has Set?

    The best way to check if it has cooked is to put a knife into the center of the casserole. If it comes out clean, then you know the casserole has set and cooked through. If you notice any lingering egg residue it will need a little longer.
