Tater Tot Breakfast Casserole

Ingredients

  • 5 slices bacon, cooked and crumbled
  • 1 package Frozen tater tots
  • 10 large eggs
  • 2 cups grated cheddar cheese
  • ½ cup sour cream
  • ½ cup half and half
  • salt and pepper, to taste
  • parsley, chopped for garnish (optional)

Instructions

  • Preheat oven to 350° F. Spray a 9x13 casserole dish with cooking spray.
  • Line up the tater tots in even rows to cover the bottom of the casserole dish.
  • In a large mixing crack all eggs and whisk well. Add the half and half, sour cream, salt and pepper to the eggs and whisk to combine.
  • Pour the egg mixture over the tater tots. Sprinkle the cooked bacon and cheddar cheese over the top of the eggs.
  • Place the casserole dish in the preheated oven and bake for 40-45 minutes or until the eggs are set.
