- 5 slices bacon, cooked and crumbled
- 1 package Frozen tater tots
- 10 large eggs
- 2 cups grated cheddar cheese
- ½ cup sour cream
- ½ cup half and half
- salt and pepper, to taste
- parsley, chopped for garnish (optional)

Preheat oven to 350° F. Spray a 9x13 casserole dish with cooking spray.
Line up the tater tots in even rows to cover the bottom of the casserole dish.
In a large mixing crack all eggs and whisk well. Add the half and half, sour cream, salt and pepper to the eggs and whisk to combine.
Pour the egg mixture over the tater tots. Sprinkle the cooked bacon and cheddar cheese over the top of the eggs.
Place the casserole dish in the preheated oven and bake for 40-45 minutes or until the eggs are set.
