Equipment Needed
- Sheet pan or large baking sheet

- Boneless skinless chicken breast - You will want to cut the chicken breasts into thin strips. You could use skinless and boneless chicken thighs if you prefer.
- Bell peppers - You can use any color of bell peppers you prefer. I like to use a mixture as it looks visually appealing.
- Red onion - This is a great way to add an extra veggie to this dish and works well with the seasonings and flavors.
- Garlic - An extra flavor punch.
- Lime zest and lime juice - This will cut through the seasoning and give it that burst of freshness.
- Olive oil - A healthy option to cook up the chicken and vegetables and this helps to seal in the juices so the chicken doesn't dry out in the oven.
- Seasoning - I like to use my own version of fajita or chicken taco seasoning but you can buy some in your local grocery store if you prefer.
- Fresh cilantro - This adds a little extra freshness and is a great garnish for these chicken fajitas.
- Flour tortillas - Perfect for adding this juicy and flavorful filling and enjoying them wrapped in a tortilla. Perfection!

Step-By-Step Instructions
Gather all of your ingredients together and preheat the oven to 400° F. Spray a large sheet pan with cooking spray in preparation. You can also use parchment paper if you wish.
Slice the bell peppers and onion into thin strips and mince the garlic.
Cut the chicken breast into thin strips.
In a large bowl add the lime zest, lime juice, olive oil, and fajita seasonings. Stir to combine.
Add the peppers, red onions, garlic, and chicken to the bowl and toss well to coat everything.
Spread the chicken and vegetables in an even single layer over the bottom of the prepared sheet pan.
Bake in a preheated oven for 10 minutes. The vegetables will release water, carefully pour that off and stir the fajita mixture. Return the sheet pan to the oven to cook an additional 5 minutes. To char vegetables, turn the broiler on place the sheet pan directly under broiler for 2-3 minutes. Check the chicken with a meat thermometer to ensure it reaches the internal temperature of 165°.
Remove the fajitas from the oven and squeeze with fresh lime juice. Garnish with cilantro. Serve with warm tortillas and your choice of toppings. I like to serve mine with avocado slices, sour cream, and cheese.
Make Ahead And Meal Prep
This is such an easy recipe to make ahead and meal prep. Your future self will thank you for it. Simply prepare all of the ingredients up to the stage where you have coated the chicken and veggies in that delicious fajita seasoning. Then refrigerate for up to 24 hours. The juicy chicken and vegetables will marinate and take on all those flavors.
You could also batch-cook this recipe. Make a bigger quantity of ingredients and then once baked in the oven allow to cool before transferring to an airtight container and storing as suggested. Just make sure to not over crowd the pan because the vegetables will create steam and that will make them soggy.
Storage
If you have batch cooked this recipe or you have leftovers simply allow them to cool completely before transferring them to an airtight container. You can then store in the refrigerator for 3-4 days.
To reheat you can put it in the microwave or in the oven for a couple of minutes to warm through. Then serve with flour tortillas. Or check out some other suggestions later in this post.
Substitutions And Additions
- Change up the protein - If you love fajitas but crave something a little different then swap out the chicken for shrimp or even steak.
- Add extra vegetables or make this meat-free - You can always cook up other vegetables on the sheet pan instead of meat. Zucchini, mushrooms, broccoli, yellow squash, or cherry tomatoes will all work well.
- Make it vegan - You can also make this vegan by avoiding sour cream and Greek yogurt as a topping.
- Wraps - If you are being health conscious you could use large lettuce leaves instead of the tortillas. You could also use corn tortillas as an alternative option.
- Serve it up differently - You don’t have to make these as fajitas. You can serve up the cooked chicken and vegetables with rice, potatoes, or even with pasta.
- Garlic - You can use garlic powder instead of minced garlic if you are out of fresh garlic at home. Onion powder or granules can also be a great way to add extra flavor.
What Should I serve With These Sheet Pan Chicken Fajitas?
These fajitas are a perfect and complete meal, but if you love a few sides or you are feeding a crowd then you may want to serve it up with rice, fried potatoes, or a delicious green salad. Instead of avocado slices you can add a spoonful of this delicious Guacamole!
Are Chicken Fajitas Spicy?
I would rate this chicken fajita recipe as a medium spice. But you can adjust the seasoning according to your own preferences. Add a bit of extra chili powder if you want them hot, or tone things down a little. Even though they have a spicy flavor it isn’t overwhelming, so perfect for kids to try.
