    Parmesan Truffle Fries {Air Fryer Recipe}

    Mia (my stepdaughter) is an extremely picky eater.  I will say as she is getting older she is a little more willing to try things but still won’t come near green vegetables!   As picky as Mia can be about vegetables, this 10 year old loves truffles!  She first experienced them on pizza and now truffle fries are her favorite at any restaurant that has them on the menu.  Of course we had to make this side dish at home and make it a little healthier.

    What are truffles?

    I remember the first time I saw truffle on a menu at a restaurant and was thinking what in the world is that?  Now it seems to becoming more main stream, but if you still have not ventured out and tried truffles let me explain what they are.

    Truffles are a type of fungi that grow underground and can be considered a mushroom, just do not confuse them with a piece of chocolate!  They look like a misshapen potato and are found in either black or white varieties.  White truffles have the best flavor.  They have a more pungent, earthy flavor while black truffles are a little more subtle in flavor and less expensive.

    Because harvesting truffles requires trained pigs or dogs to sniff them out they are very pricey.  Most restaurants use truffle infused olive oil instead of shaved pieces of actual truffle.

    What are truffle fries?

    Truffle fries are French fries that have had truffle flavoring added.  Usually most people opt for truffle oil because of the cost of a whole truffle.  However, be selective of the oil that you buy.  The first time I ventured out to buy my first botte of truffle oil I was unaware that many are made with truffle essence.  This is basically imitation flavoring and has a slightly fake truffle flavor.  After doing some research I was able to find a bottle of organic white truffle oil made with real truffles in specialty stores.  This authentic truffle oil has a robust flavor.

    Ingredients needed for Parmesan Truffle Fries

    • potatoes- large russet potatoes are the best for French fries
    • truffle oil-read the label to make sure it has actual truffles in the ingredients
    • paprika
    • garlic powder
    • truffle salt- or sea salt
    • Parmesan cheese- freshly grated

    How to make homemade truffle fries

    It’s easy to make your own truffle fries at home.  Making homemade fries requires a few ingredients. Although the truffle oil is expensive a little goes a long way.  I use mine sparingly, only a couple teaspoons at a time!

    Start by washing your potatoes.  I leave the peel on for that rustic look.  Use a very sharp knife to cut potatoes into small French fry sized pieces or potato wedges.  Just make sure that the pieces are uniform in size so that they cook evenly.

    Add the potatoes to a bowl and drizzle with 2 teaspoons of truffle oil.  Toss well and add the fries in a single layer to the trays of an air fryer.

    Preheat air fryer for a few minutes.  Then add the trays to the air fryer and time for 15 minutes.

    Half way through remove trays and flip the fries over so they can brown on both sides.

    Check at 15 minutes to see if fries are cooked and crispy.  If needed add for a few extra minutes.

    Remove from air fryer and place in a large bowl.  Drizzle remaining truffle oil over fries.  A little truffle oil goes along way, seriously this is like liquid gold and I use it very sparingly!  Sprinkle with seasoning and Parmesan cheese, tossing to evenly coat.

    Arrange on a plate and serve the truffle fries with ketchup.

    Can I make truffle fries in the oven?

    Yes!  You can make truffle fries in the oven if you do not have an air fryer.  While you are preparing your potatoes preheat the oven to 425 degrees.  Line large baking sheets with foil and spread the fries in a single layer.  Bake for 25 minutes flipping during the halfway point.

    Are truffle fries healthier?

    Because my Parmesan truffle fries recipe is baked in the air fryer and not fried in a deep fryer they are very healthy!  That’s the beauty of an air fryer because you can get golden brown results with very little oil.

    Are truffle fries vegan?

    Truffle oil is considered a vegan food.  If you are opting for a vegan version of this recipe either omit the cheese or try a vegan Parmesan.  You can even make your own!  While I’ve never tried making my own homemade vegan Parmesan cheese, it sounds amazing.

    • Air Fryer

    Ingredients

    • 2 large russet potatoes
    • 2 ½ teaspoons truffle oil, divided
    • ⅛ teaspoon paprika
    • ⅛ teaspoon garlic powder
    • ⅛ teaspoon truffle salt
    • 2 tablespoons fresh grated parmesan cheese

    Instructions

    • Preheat air fryer for 5 minutes while preparing potatoes.
    • Wash potatoes and dry well. Using a sharp knife cut potatoes into French fry shaped pieces.
    • Add cut potatoes to a large bowl. Drizzle with 2 teaspoons of truffle oil, reserving ½ a teaspoon.
    • Toss well to coat potatoes and place in a single layer inside the air fryer.
    • Set air fryer to the fries setting and cook for 15 minutes. Flip the fries half way through cooking and switch the shelves around so that they cook more evenly.
    • At the 15 minute mark check the fries, and if needed add a couple more minutes of cook time. Time will vary depending on the type of air fryer you have and the size of the French fries.
    • Once the French fries are cooked, remove from air fryer toss with seasoning, parmesan cheese. Drizzle remaining ½ teaspoon of truffle oil over the top.
    • Serve with ketchup.

    Notes

    *I used large russet potatoes.  The nutritional information may change slightly depending on the size of your potatoes.  
    *If you do not have truffle salt use regular salt.
