I haven't always been a tomato fan, but I remember the first time I tried roasted tomatoes I was shocked at the sweetness. Now this is one of my favorite ways to eat tomatoes so if you have an abundance of tomatoes in your garden you must try this recipe!
These tomatoes are bursting with flavor. Roasted tomatoes are sweeter and juicier than fresh tomatoes. My favorite ways to eat these tomatoes is either in a salad or a side dish with a little balsamic vinegar. And by making this easy recipe in the air fryer it is so much faster than a conventional oven!

Equipment Needed
PowerXL Air Fryer 7 QT Maxx Classic- is my favorite air fryer model that I use daily. If you have not invested in an air fryer for your kitchen, this is a must have appliance! I know yet another kitchen gadget, but it will free up oven space for the holidays and make so many sides and entrees faster and tastier!
Key Ingredients
tomatoes- I used Campari tomatoes but you can roast any variety that you like. If you roast a smaller cherry tomato you could leave it whole and it probably will take a little less time to roast.
olive oil- this recipe requires only a few ingredients so opt for a high quality olive oil. If you prefer you could use avocado oil as well.
Step-By-Step Instructions
First start by washing your tomatoes. Use a cutting board and sharp knife to cut the tomatoes in half. You can use a pairing knife to remove the end of the tomato if necessary.
Place all of the halved tomatoes cut side up in the bottom of the air fryer basket. Drizzle the tomatoes with olive oil. Sprinkle with Italian seasoning, salt and pepper. Slide the air fryer basket in and set the air fryer setting to 400 degrees Fahrenheit and roast tomatoes for 10 -12 minutes. The cooking time will vary depending on the size of your tomatoes. Add a few extra minutes for larger tomatoes like beefsteak tomatoes or heirloom tomatoes.
Remove the tomatoes from the basket after the desired amount of time. The tomatoes will be soft and tender.
Expert Tips
Do not use aluminum foil or parchment paper in the air fryer when roasting tomatoes. Although I do normally love using foil for easy clean up it actually will block the hot air from circulating in the air fryer.
Do not use cooking sprays in your air fryer! Olive oil will not harm the non-stick surface of the air fryer basket.
Any variety of tomatoes can be roasted in the air fryer. Choose whichever type you prefer whether its a small grape tomatoes or larger Roma tomatoes. Remember the cook time will vary depending on the size of the tomato so add an additional couple of minutes if you are roasting larger tomatoes.
How To Serve Roasted Tomatoes
I love to serve these tomatoes warm or room temperature on salads. Another easy way to serve the tomatoes is by making simple side dish by sprinkling with a little bit of crumbled goat cheese, chopped fresh basil and a drizzle of balsamic vinegar or balsamic glaze. There are so many different flavor ideas that you can try. You can also add a chopped garlic clove, fresh oregano and freshly grated parmesan cheese.
There are a variety of recipes that you can add roasted tomatoes to. Tomato soup or homemade pasta sauce are a great way to use the tomatoes.
How To Store Roasted Tomatoes
You can make an extra batch of these to add to salads throughout the week. Allow them to completely cool and then transfer the tomatoes to an airtight container. Keep in the refrigerator for up to 5 days.

Ingredients
- 1 pound tomatoes
- 2 teaspoons olive oil
- ⅛ teaspoon sea salt
- ⅛ teaspoon cracked black pepper
- ⅛ teaspoon Italian seasoning blend
Instructions
- Wash tomatoes and pat dry with a paper towel.
- Use a pairing knife to remove the stem end and cut the tomatoes in half.
- Lay the tomatoes cut side up in a single layer in the bottom of the air fryer basket.
- Set the air fryer temperature to 400 degrees and time for 10-12 minutes. Cook until tomatoes are soft and tender.
- Tomatoes can be served warm or at room temperature.
- To store leftovers, place in an airtight container in the refrigerator for up to 5 days.
