This easy blackberry cobbler recipe takes me back to my childhood when I would pick wild blackberries in the summer. My mom would make the family a delicious cobbler with the juicy blackberries. It was the perfect dessert on a hot summer day.

What Is A Cobbler?
Cobblers can vary a lot and are very different depending on the region you live in. The basic dessert recipe has a fruit filling that has a biscuit like top crust that resembles a cobblestone street which is where the name originated.
Cobblers are a popular recipe for church potlucks, summer cookouts and holiday desserts. They are the easiest desserts to make and can definitely feed a crowd.

blackberries- fresh blackberries are the best for this cobbler recipe. Check out your local farmers markets to find the best berries that are sweet and ripe.
cornstarch-is added to the blackberries because it will help thicken the blackberry juices and make a sauce as they cook.
sugar-a few tablespoons added to the blackberries is just enough to cut the tartness if they are not quite ripe. Add extra sugar if needed.
Step-By-Step Instructions
Preheat oven to 400° F. While oven preheats wash blackberries. Discard any bad berries and pick out any pieces of leaves. Place the blackberries in a 9x13 inch casserole dish.
Sprinkle the berries with sugar, cinnamon and cornstarch. Stir to coat the berries. Once the oven has preheated place the dish in the oven for 10-15 minutes while preparing the cobbler topping. This will help soften the berries so they create lots of juice.
Prepare the cobbler topping. In a large bowl mix flour, sugar, baking powder and salt together.
Add slices of butter to the flour mixture and use a pastry blender to cut the butter into the flour. The butter will become small pea sized pieces that are coated with the flour.
Add the milk and vanilla extract to the flour mixture. Use a spoon to stir the dough together.
Drop dallops of the dough over the top of the blackberries. Use the back of a spoon to slightly spread the dough to cover the blackberries.
Return the blackberry cobbler to the oven and bake for 35 minutes or until the blackberry cobbler filling is bubbling and the cobbler crust is golden brown. Remove from the oven and let the cobbler cool for a few minutes before serving. The sauce that the berries create as they release their juice will thicken as the cobbler cools.
Serving Suggestions
This homemade blackberry cobbler recipe is best served warm with a big scoop of vanilla ice cream or whipped topping. You can serve at room temperature as well.

sugar- you can add a few extra tablespoons of sugar to tart blackberries. Usually ripe berries do not need as much sugar.
How Do You Thicken Berry Juice For A Cobbler?
The cornstarch that is added to the recipe will help thicken the juice as the berries cook and soften. This will create a thick and delicious berry sauce as the cobbler cools.
Storage
Store leftover cobbler in an airtight container in the refrigerator for up to 4 days. If your baking dish does not have a cover use aluminum foil or plastic wrap to cover.

Ingredients
Blackberries
- 36 ounces blackberries
- 3 tablespoons sugar
- ¼ teaspoon cinnamon
- 1 tablespoon cornstarch
Cobbler Topping
- 1 and ½ cups all-purpose flour
- ⅓ cup sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 5 tablespoons butter
- ½ cup +1 tablespoon milk
- 1 teaspoon vanilla extract
Instructions
Blackberries
- Preheat oven to 400° F. Lightly spray a 9x13 inch casserole dish with cooking spray.
- Wash and pick through berries, discarding any bad ones and removing any stems or leaves.
- Add the berries to the casserole dish. Sprinkle with sugar, cinnamon and cornstarch. Stir to coat and place the berries in the oven while preparing the cobbler topping.
Cobbler Topping
- Add flour, sugar, baking powder and salt to a mixing bowl and stir to combine.
- Cut butter into chunks, use a pastry blender or knives to cut the butter into the flour. The flour and butter will become a crumb texture.
- Pour in the milk and vanilla extract. Use a spatula to stir together until the milk is absorbed and no white streaks of flour remain.
- Remove the berries from the oven after at least 10 minutes. Add dallops of dough to the top of the berries. Use the back of a spoon to smooth out and cover as much of the berries as possible. (Does not need to be perfect).
- Bake in preheated oven for 35-40 minutes or until berries are bubbling and juicy and topping is golden brown and not doughy.
- Let the cobbler cool for 10 minutes before serving. Serve warm or at room temperature with vanilla ice cream or whipped cream.
