I love a homemade crust, however I do not always love dragging out my food processor and waiting an hour for my dough to chill in the fridge before I can start my dessert. If you need a quick beautiful dessert, try using a frozen puff pastry to make this easy peach galette recipe. It still has the same gorgeous, rustic look and delicious buttery crust while being made in just 10 minutes!
I know some of you are thinking, " Is this like a pie or a peach tart"? The easy answer is it is a less fancy version of a tart, while tasting very similar with a fruit filling and buttery crust.
What is a Galette?
A galette is a French term for a freeform dish made with a flaky crust. It is similar to a pie or a tart. Galettes can be made with savory fillings or a sweet dish. What makes a galette beautiful is its rustic appearance, being made directly on a baking sheet with no pie dish.
You can use just about any fresh fruit to make a galette. Other stone fruit like plums or apricots are other great choices for fruit galettes.
How To Select The Perfect Peach
Peach season is a short period of time from the end of July through September. Because we do not have a lot of time to enjoy these sweet peaches it is best to utilize them in everyway we can! When at the store or famers market look for the peaches that have vibrant colors, while green tones are a sign they were picked too early.
Next, give the peach a gentle squeeze near the stem end. If it gives a little then it is ripe and ready to eat. If it is still hard it will need another the day to ripen. To use in a baked dessert the peaches do not have to be perfectly ripe because they will soften as they bake.

puff pastry- Frozen puff pastry is available in the freezer section of your grocery store. When baked this flaky pastry crust becomes golden brown with a delicious buttery taste. You will only need one sheet of puff pastry.
Step-By-Step Instructions
Preheat oven to 400 degrees Fahrenheit. Remove puff pastry from the freezer so it can thaw while you wash and slice the peaches.
Cut the peaches in uniform slices about ½ inch thick. This will ensure they cook evenly.
Add all of peach slices to a large bowl and sprinkle with cinnamon and cornstarch. Gently stir to coat.
Line a baking tray with parchment paper. Lay the thawed puff pastry on the parchment. Gently stretch the pastry to make it a few inches longer on each side. If you need to use a rolling pin and lay the puff pastry on a clean work surface. I just find it easier to stretch it out directly on the baking pan.
Arrange the fresh peach slices in a pattern in the center of the puff pastry, leaving a two inch border around the edges. Fold the edges of the dough up over the peaches leaving the center exposed.
Sprinkle sugar over the top of the peaches. It will seem like a lot of sugar, but shake the tray and the sugar will settle in the cracks and corners of the peach slices. As the galette bakes the sugar will melt making the peaches extra sweet and syrupy!
Brush the edges of the puff pastry with an egg wash. There are so many ways to make an egg wash. My preferred method is an egg white mixed with a little water. This helps to create that beautiful brown pastry crust as the puff pastry bakes. It does not affect the flavor but just gives it a glossy shine and helps the browning process.
Bake the peach galette puff pastry in a preheated oven for 25 minutes. The galette crust will be golden brown and the peaches filling will be fork tender.
Serving Suggestions
A galette is easy to serve. Let it cool after removing from the oven for a few minutes on a wire rack. This will give the juices time to thicken, creating that wonderful sweet syrup. Sometimes you see recipes for a galette having a glaze brushed on top, but I just use my pastry brush to utilize the amazing peach juices this creates on its own as it bakes!
Cut the puff pastry peach galette into pie shaped slices. This dessert is meant to be a little rustic so don't worry if they are all shaped a little different. Add a scoop of vanilla ice cream or make homemade whipped cream with heavy cream.

Easy Peach Galette Recipe with Puff Pastry
Ingredients
- 2-3 peaches, sliced ½ inch thick
- 1 tablespoon cornstarch
- ¼ teaspoon cinnamon
- 1 sheet puff pastry
- ¼ cup sugar
- 1 egg white
- 1 teaspoon water
Instructions
- Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Remove the puff pastry from freezer to thaw while slicing peaches.
- Wash and slice peaches in ¼ inch thick slices, making sure they are uniform in size.
- Add all of the peach slices to a large bowl. Toss with cornstarch and cinnamon.
- When puff pastry has thawed, slightly stretch pastry out on parchment paper.
- Arrange the peach slices in a design on the center of the pastry leaving a 2 inch boarder.
- Pull the pastry up around the peaches leaving the top exposed.
- Sprinkle the sugar over the peaches, shaking the tray to allow the sugar to fall between the slices.
- Add a teaspoon of water to egg white and stir well. Use a pastry brush to brush the edges of pastry. This will give it a golden brown shine.
- Place in preheated oven and bake for 25 minutes or until puff pastry is golden brown and peaches are soft.
- Allow to cool for 10 minutes before slicing. Add a scoop of vanilla ice cream or whipped cream.
