    Grilled Peach and Burrata Salad with Balsamic

    Why ThIs Grilled Peach Salad is The Best!

    If the run of the mill simple salad has begun to bore you, you must try this grilled peach salad recipe! Juicy peaches are one of my all time favorite fruits. I just wish peach season lasted longer! Because I feel the best quality peaches are only available at the end of July thru September here in Florida, I have to put these to good use while I can. There's really nothing better than juicy fresh peaches!

    So of course I'm doing all my favorite baked peach recipes, but I'm also grilling them! This may sound a little strange at first if you have never grilled fruit. When you grill peaches it gives them a slightly smoky flavor that really intensifies the sweetness of the fruit! Now pair the sweetness of the grilled peaches with the creamy burrata cheese and you have the perfect summer salad!

    What is Burrata?

    If you have never tried burrata cheese, you have to try it! Especially if you love mozzarella cheese, you will love burrata. It looks like a small ball a little smaller than a tennis ball. The outer shell is actually fresh mozzarella cheese and then when you cut into the cheese you find the center is soft creamy curds. It is absolutely delicious, and I'm a little obsessed with burrata cheese now. I have used it in my tomato bruschetta recipe too!

    Key Ingredients

    peaches- are considered stone fruits because of the stone-like pit in the center of the fruit. This summer fruit is best when it is in season, so take advantage while peaches are ripe!

    burrata- creamy burrata cheese is an Italian cow's milk cheese. It is available in most local grocery stores.

    Ingredients for the peach and burrata salad: walnuts, burrata, balsamic glaze, cucumbers, tomatoes, olive oil, mint, peaches, spring mix, blueberries.

    Step-By-Step Instructions

    Start by heating either an outdoor grill or grill pan over medium heat. I love to grill and if I’m making burgers, I’d definitely take the time to fire up my outdoor grill. But for these peach slices a grill pan works fine.

    While the grill is heating, wash and slice the peaches. For this recipe, I like to leave them in bigger slices because it’s easier to flip with tongs.

    Coat the sides of your peaches with olive oil. You can use a pastry brush or silicon brush to brush the oil on. This will prevent those peaches from sticking. Make sure to spray your grill pan or rub a little olive oil on the grill grates as well. Place the cut side of the peaches on the grill.

    The sliced peaches do not take long to grill so keep an eye on them and flip them after a couple minutes to get grill marks on both sides.

    Once you get your peach slices on the grill you can prepare the salad by adding the spring mix to a large bowl with cherry tomatoes, blueberries, cucumbers and walnuts.

    Slice the balls of burrata cheese. I slice each ball into 4 pieces. Arrange that in the salad along with the warm peaches.

    Drizzle with this homemade balsamic glaze or regular balsamic vinegar and a good quality olive oil. Serve immediately while the peaches are still warm.

    Serving Suggestion

    This peach burrata salad recipe is the perfect side dish to go along with grilled chicken or seafood. Because it is loaded with so many fresh veggies, fruits and cheese this could be a light meal on it's own. Serve it with a piece of good crusty bread and a glass of wine!

    This salad should be served at room temperature. That's when the peaches and burrata will taste the best.

    Substitutions and Additions

    Salads are a great way to use up your pantry items! Here's a few additions you can add to this salad. Remember it's your creation!

    • thinly sliced red onion or shallot
    • pecans in place of walnuts
    • use fresh basil instead of mint. There are so many fresh herbs that taste great in salads! You can even substitute spinach or arugula for the spring mix. This salad can easily be made to your preference.

    Expert Tips

    • use ripe but firm peaches, anything too ripe will not grill well
    • cut the peaches into larger slices so that it is easier to flip with tongs. Thin slices could fall through the grill grates of your outdoor gril

    How to Store

    This salad is best when eaten right away. If you plan to have leftovers it is better to not add the balsamic or olive oil to the entire salad to keep the greens from wilting. Store the grilled peaches separately and warm in the microwave.

    FAQ

    Should you peel peaches before grilling?

    No! The peel actually keeps the peach intact while on the grill.

    Should peaches be ripe to grill?

    When grilling peaches you want them to be slightly firm because overly ripe fruit will become to soft during grilling.

    • 2 ripe peaches, cut into slices
    • 1 teaspoon olive oil
    • 1 5 ounce package spring mix
    • ⅓ cup blueberries
    • ¼ cup walnuts
    • ⅓ cup cucumber, chopped
    • 2 balls burrata, quartered
    • 2 tablespoons balsamic glaze
    • 2 tablespoons olive oil

    Instructions

    • Heat a grill or grill pan over medium heat.
    • Wash and slice the peaches into 1 inch thick slices.
    • Brush peaches with olive oil before placing on the preheated grill.
    • Grill peach slices for 2 minutes per side.
    • Add the spring mix to a large serving bowl. Sprinkle with blackberries, walnuts, chopped cucumber and tomatoes.
    • Add the grilled peaches and burrata to the salad.
    • Drizzle with balsamic glaze and olive oil. Serve immediately.
