    Why You’ll Love These Lemon Bars

    What can go wrong with a recipe that requires two simple ingredients and makes something that tastes amazing? Nothing! And this is exactly what this easy recipe is. Using lemon pie filling and a cake box mix you can create these tasty lemon bars in no time at all. I love the fresh citrus flavor of lemon and I just think it makes the perfect dessert or sweet treat.

    Sometimes you just want a dessert that is light and airy. Just a little something sweet to have with a cup of tea and these lemon bars are the perfect solution.

    The whole family is going to love these lemon bars, and they will become an instant favorite. Perfect for the weekends, to make and bake for friends and family, or just to whip up a batch when you have a craving for something delicious. It really doesn’t get any easier, or indeed any better, than these easy two ingredient lemon bars.

    Key Ingredients

    lemon pie filling- This is why this recipe is so simple. The lemon pie filling is ready and done for you. All of the flavor, none of the hassle. You could make your own if you wish but there is no need to mess with simplicity. 

    angel food cake mix- The cake box mix is what will give the texture, fluffiness, and add to the sweetness of these lemon bars. You could use a yellow cake box or vanilla cake box mix if you wish.

    Step-By-Step Instructions

    Preheat the oven to 350. Line a 13x 9 inch baking dish with parchment paper leaving the sides longer to use as handles to pull the bars out of the pan easily.

    Add the lemon pie filling and angel food cake mix to a large bowl. Use a spoon or spatula to combine until no streaks of cake mix remain.

    Mixing the batter and adding it to the baking dish.

    Spread the mixture into the prepared baking dish. Place in the oven and bake for 30 minutes. The top will be slightly golden brown and will rise.

    Allow the bars to cool completely before slicing into squares. You can dust these with powdered sugar but it’s not necessary.

    Substitutions And Additions

    • You could use a different cake box mix. Angel food cake gives these lemon bars that light and airy texture, but you can experiment with different options. 
    • Why not try a different flavor? You could use other pie fillings and get creative to make your own 2 ingredient bars. Orange, cherry, blueberry are just some of the ones worth trying.

    Storage

    You can store any remaining lemon bars in an airtight container in the refrigerator for up to 2 days.

    I have kept things simple with this recipe but you can get as creative as you like. A dusting of powdered sugar, a dollop of whipped cream, or even a sprinkle of lemon zest would be great options to consider.

    • 1- 21 ounce can lemon pie filling
    • 1 box angel food cake
    • 2 tablespoons powdered sugar, optional

    Instructions

    • Preheat oven to 350° F. Line a 13x9 inch pan with parchment paper overhang on the ends to use as handles to lift the bars out of the pan after baking.
    • In a large bowl combine the angel food cake and lemon pie filling. Stir with a spoon or spatula just until no dry streaks of cake mix remain.
    • Spread the mixture into the prepared dish and bake in the preheated oven for 30 minutes. The top will be lightly golden brown and a toothpick inserted in the middle will come out clean.
    • Allow bars to cool completely before cutting into squares. Store in the refrigerator for up to 2 days.
