    Creamy Homemade Balsamic Dressing {with Greek Yogurt}

    I love the zip of a balsamic vinaigrette dressing!  Make a creamy homemade balsamic dressing to drizzle over salads or roasted vegetables. This easy salad dressing is simple to make and tastes so much better than the store bought variety.  Plus by making it with Greek yogurt instead of mayonnaise you will save on extra calories!

    Why this creamy balsamic is the best!

    The best part of making your own homemade salad dressings is that you have control of the ingredients.  Salads are meant to be healthy but so many people smother them with high calorie dressings. Skip the heavy dressings by making your own healthy homemade salad dressing with Greek yogurt.  This dressing has an amazing zingy flavor from the balsamic vinegar.  The smooth and creamy texture from the Greek yogurt is perfect for drizzling over vegetables.

    Key Ingredients

    balsamic vinegar- because this is the main ingredient use a good quality vinegar.  Age matters so look for one that is aged for 12 years or more at the local grocery store.

    Greek yogurt- use whole milk or fat free depending on your preference.  Greek yogurt is a better option than mayonnaise because it gives a similar consistency without the fat.

    roasted garlic- roast your own garlic cloves in the air fryer or use a bottled variety.  You can also substitute with fresh garlic or a pinch of garlic powder.  The garlic adds extra flavor but can be omitted.

    honey- adds a little sweetness but if you prefer you can use pure maple syrup.

    thyme- I used dried herbs for this homemade dressing but you can use fresh herbs too.  An Italian blend would also be a nice option if you do not have thyme on hand.

     

    Step-by-step instructions

    Add Greek yogurt, balsamic vinegar, salt, black pepper olive oil, honey and roasted garlic to a blender or food processor and process on high speed to blend together.  You can also use a hand held immersion blender if you prefer and blend in a large bowl until smooth.

    Transfer dressing to a clean glass jar for serving.

    How to use the creamy balsamic dressing recipe

    Of course this dressing is the perfect complement to any basic salad recipe but you can also use this versatile dressing as a dip for fresh vegetables, on pasta salads or on a Caprese salad.  I love this creamy dressing on a Mediterranean salad with lots of olives and feta cheese.

    Expert tips

    You do not have to use a blender to make this dressing.  You can chop the pieces of garlic very finely and add everything to a mason jar and shake vigorously to mix the dressing together.

    storage

    Transfer the leftover dressing to an airtight container like a mason jar and store the bottled dressing in the refrigerator for 5-7 days.  If it separates just give it a stir before serving.

    Ingredients

    • ½ cup Greek yogurt
    • ¼ cup balsamic vinegar
    • 2 cloves roasted garlic
    • 1 tablespoon honey
    • 1 tablespoon olive oil
    • ¼ teaspoon thyme
    • ¼ teaspoon salt
    • ¼ teaspoon pepper

    Instructions

    • Add all ingredients to a blender. Blend on high until smooth.
