What is a vinaigrette?

What is a vinaigrette and how is it different from a dressing?  A vinaigrette is simply made of oil and something acidic.  The staple in my house growing up was oil and vinegar which my mom and grandmother would infuse with garlic cloves.  It was simple and light.  I always loved this and it's probably why I make my own vinaigrette and dressings. They just taste better!

A dressing is a broader category because its ingredients can vary more.  Dressing can be made from mayonnaise, yogurt or anything with a creamy base.

Ingredients in a citrus vinaigrette

  • fresh squeezed orange juice
  • olive oil- or avocado oil
  • honey-or maple syrup
  • white balsamic- or rice vinegar
  • salt and pepper

This is a great basic vinaigrette.  Feel free to jazz it up with your favorite herbs.

is a vinaigrette dressing healthy?

Vinaigrettes are usually a healthier choice than a heavy mayonnaise based dressing.  Of course moderation is always the key so make sure you measure the serving amount you use.  When you pour straight from the jar the amount you use can be deceiving.

how to make a citrus Vinaigrette

Making a citrus vinaigrette is so easy.  I always use a fresh orange and squeeze it into a measuring cup making sure no seeds come in with the juice. Then I add the rest of the ingredients.  I stir well with a whisk to thoroughly mix the honey into the liquid.  The acid from the orange juice will help break down the honey.
Then pour into a mason jar, secure the lid and shake vigorously right before serving.  This vinaigrette can be stored in the fridge for 3-4 days.  Shake well again before serving.

Citrus Vinaigrette

Ingredients

  • ⅓ cup orange juice
  • ¼ cup olive oil
  • 1 tablespoon honey
  • 1 tablespoon white balsamic vinegar
  • salt and pepper to taste

Instructions

  • Squeeze orange into a mixing bowl making sure to remove any seeds. Add remaining ingredients and whisk well. Transfer to a mason jar or other air tight container and shake vigorously.
  • Store in refrigerator for 3-4 days. Will need to be shaken again right before serving.
