If you love the rich chocolate flavor of brownies, this overnight oats recipe is for you! This brownie batter oatmeal recipe has an intense chocolate flavor and is a delicious way to start the day.
Because mornings can be hectic with getting ready for work and the kids off to school, I find that having a healthy breakfast prepped the night before really starts my day off right. Overnight oats are the perfect solution to those busy mornings. You can eat these cold right out of the refrigerator or stick them in the microwave for 60-90 seconds if you are not a fan of cold oatmeal.

Equipment Needed
mason jars- I prefer to portion my overnight oats into a mason jar or glass container but you can use any type of sealable container you have on hand.
Key Ingredients
cocoa powder- this gives the overnight oats the rich chocolatey flavor. Look for natural unsweetened cocoa powder for a this oatmeal recipe. There is also cacao powder which is similar to cocoa except that it has been less processed and claims that it is more natural.
old fashioned oats- are my favorite type of oat for overnight oats. I prefer the chewy texture although you can use quick oats if you prefer.
espresso powder- if you do not have this on hand you can simply omit it from the recipe. I always add a small amount to my brownies because it intensifies the chocolate flavor.
Step-By Step Instructions
In a large bowl mix together the almond milk, cocoa powder, honey and espresso powder. I added 4 tablespoons of honey to make it sweet enough to suit my taste, but you may want to add more or less depending on how dark you like your chocolate.
It took a few minutes to stir in the cocoa powder but I think it is best to get it mixed into the milk before adding the oats.
Once most of the lumps of cocoa power have dissolved into the milk add the oats, chia seeds and half of the chocolate chips.
Once combined portion the mixture into individual jars. You can divide this into 3 or 4 servings depending on your hunger level at breakfast. Top the oats with the remaining chocolate chips.
Cover the storage containers and store the brownie batter oatmeal in the refrigerator for at least 4 hours or preferably overnight.
Storage
Store overnight oats in an airtight container in the refrigerator for up to 5 days.
Substitutions And Additions
honey- you can use pure maple syrup or agave syrup instead of honey in this recipe. Because honey is sweeter you may need to add more maple syrup and the flavor of the maple may be more noticeable.
almond milk- any kind of milk will work in this recipe. You can use a plant-based milk or regular milk but just remember it will change the nutritional information slightly because it is calculated using unsweetened almond milk.
old fashioned oats- you can use quick oats but they will be a little softer in texture than the chewier old fashioned oat. Steel-cut oats are less processed and would be too chewy without cooking first.
chocolate chips- I like to add mini chocolate chips for a little crunch and sweetness but feel free to add dark chocolate chips or cacao nibs.
peanut butter- is a great way to add healthy fats to brownie batter oats. You can also add almond butter or sunflower seed butter if you have nut allergies.
protein powder- Add a scoop of protein powder to give the recipe a few extra grams of protein. I would use chocolate protein and reduce the amount of cocoa powder and honey.
Can You Freeze Overnight Oats?
Yes! Overnight oats can be frozen for up to 3 months for the best texture. It is best to freeze as soon as you assemble the oats so that they can soak when they thaw.
To thaw the oats, remove from the freezer and place in the refrigerator the night before so they can thaw overnight.
Can I Use Quick Oats For Overnight Oats?
Quick oats are more processed than old-fashioned oats. They will soak up the liquid quicker and have a softer texture. I have tried overnight oats with both types of oats and personally prefer old-fashioned oats however you can make this recipe with quick oats if you prefer.

Rich Chocolate Brownie Batter Overnight Oats Recipe
Ingredients
- 1 and ½ cups almond milk
- 4 tablespoons honey or maple syrup
- 6 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- ¼ teaspoon espresso powder, optional
- 2 cups old fashioned oats
- 1 tablespoon chia seeds
Instructions
- In a large bowl mix the almond milk, honey, cocoa powder, vanilla extract and espresso powder. Continue to stir until the cocoa powder has dissolved into the milk.
- Add the oats, chia seeds and half of the chocolate chips. Once combined, portion the oat mixture into individual containers. Top with extra chocolate chips or other toppings if desired.
- Cover the oats and place in the refrigerator for at least 4 hours or preferably overnight for the best texture.
- Serve cold after the oats soak.
