Typically when someone thinks of a breakfast muffin they picture the bakery style that are loaded with a heavy streusel topping and made with lots of butter and sugar. Those muffins are more suited for dessert than breakfast! Healthy muffins can be achieved if you learn how to swap a few ingredients! I love making muffins because they are so versatile. I can usually find ingredients in my pantry to make some sort of muffin recipe. Sometimes it's a challenge to see what what new recipe that I will create! I honestly didn't realize just how many muffin recipes I had made until I started writing this post. I think I counted close to 16 and those are just the ones that made it to the blog. There are still many I've been working to make perfect!
I decided to share a compilation of all of my family's favorites. These are all healthy muffins that have combinations of whole wheat flour and old fashioned oats for extra fiber. Plus I always use Greek yogurt to give my muffins lots of moisture without the fat of butter or oil.

What can bananas be used for in baking?
I love making muffins with bananas for several reasons. It is a great way to use up those bananas that might have gotten a little too ripe! Bananas also add a lot of moisture to the muffin without the extra fat from butter or oil. The best part is the natural sweetness that you get from ripe bananas. I only need a little honey or maple syrup to sweeten my muffins because the ripe banana adds a natural sweet flavor!

During the holidays I love making recipes that are festive. There's always the temptation to bake lots of sweets but I stick to my healthy recipe ingredient swaps and make delicious recipes my family loves! Of course when fall comes I crave everything pumpkin. Cranberry muffins are also a fun recipe to make for a breakfast or brunch around Thanksgiving or Christmas!
