Step-By-Step
Start melting the chocolate by adding the white chocolate to a large microwave-safe bowl. Microwave in short bursts according to the package directions, stirring between each interval until it's completely smooth.
Spread evenly by pouring the melted chocolate onto a parchment-lined baking sheet. Use a spatula to spread it into an even layer about ¼ inch thick. Work quickly, as white chocolate firms up fast.
Add color using gel food coloring, dip a toothpick into the gel, and lightly swirl it into the chocolate. Use only a little; gel food coloring is highly concentrated.

Immediately sprinkle freeze-dried strawberries, candy hearts, and sprinkles over the chocolate. Gently press them into the surface so they stick. For extra flavor, crush one strawberry into dust and sprinkle it over the top.
Let the bark sit at room temperature for about 30 minutes, or until fully set.
Break or cut into irregular pieces once firm, using a sharp knife. You can also break it by hand for a more rustic look.

Valentine's White Chocolate Strawberry Bark
Ingredients
- 2 10 ounce bags Ghirardelli white chocolate melting wafers
- drops pink or red gel food coloring (do not use liquid)
- heart shape candy (I used Ghirardelli creme brulee hearts)
- 1 bag freeze dried strawberries (you won't use the entire bag)
- sprinkles, optional
Instructions
- Add the wafers to a large microwave safe bowl. In short burst microwave the white chocolate wafers according to the package directions, stirring in between each interval until the white chocolate is completely smooth.
- Use a spatula to spread the white chocolate in an even layer about a ¼ inch thick over a parchment lined cookie sheet. Have your add-ins ready to work quickly as the chocolate will firm quickly.
- If using the food gel, use a tooth pick to stir the color into the chocolate. You only need very small drops for this because the color is much more concentrated than liquid. (Do not use liquid because it is too watery and will ruin the chocolate).
- Next add the candy hearts, strawberries and sprinkles. To make sure the candy and strawberries stick you can gently press into the chocolate. I like to crush one strawberry to create dust to sprinkle over the bark as well.
- Set aside to cool. This may take around 30 minutes.
- Once the bark is set, use a sharp knife to cut into irregular pieces.
