Try a Turkey Bacon, Egg and Cheese Sandwich to fuel your morning without the guilt!
I wish I could always have a leisurely morning and the time to make a turkey bacon, egg and cheese sandwich. Unfortunately, these are a special treat I make on my days off from work. Sometimes I’ll make them just for myself before going to the gym. They are so filling but not heavy, the perfect fuel for a big workout!
I love the combination of gooey egg with the crisp, salty bacon. I can’t believe I wasn’t a fan of eggs until I was in my 20’s! My brother fixed them for breakfast one morning and made me try them. I loved them scrambled with cheese. Since then I’ve made omelets, eggs over easy, quiches, etc.
Don’t get me wrong, this is not a super complicated or time consuming meal. On hectic mornings I simply save time with my 3 minute protein oats or protein shake. These recipes require less clean up and are made and eaten in about 5 minutes! However, I do love the days when we can sleep in, cook breakfast, and enjoy it together with a cup of coffee!

How to Make a breakfast sandwich
Get two skillets heating up at the same time, one for the eggs and one for the bacon. Multi tasking helps get this on the table super quick! I prefer to use a non stick skillet on medium high heat to insure the eggs do not cook to quickly. Rubbery eggs are never good! I use a little cooking spray to keep the eggs from sticking. I spray some in the pan with the turkey bacon as well because turkey has such little fat it helps to prevent it from sticking. I cook the eggs until it looks stable enough to flip. Trust me I’ve had my share of egg flipping fails but they still taste ok. It just takes a little practice.
To assemble your sandwich just layer your bacon, egg and cheese on the bread. It’s super simple, but hey it beats a drive thru any day! I love using a sharp cheddar cheese or a Havarti cheese on my egg sandwich. Lets face it, cheese is great on everything and even better when it’s a little melty from the warm egg. So that’s it for an easy but delicious breakfast!

Turkey Bacon, Egg and Cheese Sandwich
- 4 pieces bread
- 2 slices Cheddar cheese
- 2 slices turkey bacon
- 2 eggs
- Heat two skillets on medium heat. Once heated, spray both pans with cooking spray.
- Lay turkey bacon flat in pan, keeping it from overlapping.
- Cook eggs over easy to desired doneness.
- Build sandwiches by layering bacon, cheese and egg between to slices of bread.
