    Egg White French Toast is the perfect breakfast or brunch for anyone looking for a healthy version of a classic French toast recipe.  With plenty of protein this breakfast will keep you fueled instead of weighing you down.  Pair delicious eggy bread with some fresh fruit and a light drizzle of real maple syrup for just a little sweetness.

    What makes this the best french toast!

    Most French toast recipes are made with high calorie breads and lots of cream, sugar and whole eggs.  By making a few simple substitutions we can make a healthy French toast recipe that we can enjoy without the guilt and extra calories!  No need to save French toast for special occasions, this simple recipe can be made any day of the week and has plenty of extra protein to keep you fueled for a busy morning.

    What Is French Toast?

    Most people, myself included, would assume that French toast actually originated in France. However, versions of this breakfast have been made for centuries and dates bake to the Roman Empire. These recipes were created out of necessity in a time when people did not waste any food. By dipping day old or stale bread in a milk and egg mixture, it gave the bread a second chance to feed family's.

    Key Ingredients

    egg whites- you can use either carton egg whites or crack eggs and discard the egg yolks.  You will need 4-5 eggs to equal a half cup of whites.

    whole grain bread- I love a hearty whole wheat bread for my French toast.  It has more texture and holds up better to soaking.  Plus it has more nutritious fiber.  However, you can use any stale bread like white bread or slices of French bread if you prefer.

    almond milk- of course any milk will work but I choose a plain unsweetened almond milk to keep the calories lower in this recipe.  You can use whole milk or skim milk but remember the calorie content will differ slightly.

    stevia- is a plant based alternative to sugar that is essentially calorie and carb free.  If you prefer you can use a little sugar or brown sugar in this recipe.

    Step-by-step instructions

    Heat a large nonstick skillet over medium high heat. Next in a shallow dish combine egg whites, almond milk, vanilla extract, cinnamon, stevia and salt.

    Quickly dunk the slices of bread in the egg mixture making sure to coat each side.  Shake off any excess and place bread slices on a hot skillet or griddle.  Only soak bread that you are cooking immediately.  If using a skillet you will need to cook this in 2 batches.

    Before adding the soaked bread spray the skillet with cooking spray.  Cook bread slices for 2 minutes or until golden brown.  Use a spatula to flip and cook the opposite side until browned.

    Expert tips

    • Quickly dunk the bread on each side.  Soaking for too long will result in soggy French toast making it impossible to flip without it falling apart.
    • Keep your skillet on medium heat so that the egg-soaked bread does not burn.
    • Keep French toast warm until ready to serve in a 200 degree oven.

    Serving Suggestions

    Of course French toast isn't complete without delicious toppings.  Just make sure you opt for pure maple syrup and remember a little goes a long way!  Another great option is fresh berries.  I love baked strawberries because they create their own delicious syrup!

    Ingredients

    • ½ cup egg white
    • ¼ cup almond milk
    • 2 teaspoons vanilla extract
    • 1 tablespoon stevia
    • ⅛ teaspoon salt
    • 6 slices whole wheat bread

    Instructions

    • Heat a skillet or gridle over medium heat.
    • Cut bread slices in half.
    • In a shallow dish mix together egg whites, almond milk, vanilla extract, stevia and salt.
    • When skillet is warm spray with olive oil spray. Dunk the bread slices quickly coating each side in egg mixture. Add soaked bread to the heated skillet. Repeat with each slice, adding to skillet. If there is not enough room, cook in batches. Do not soak bread until ready to cook.
    • Cook bread slices for about 2 minutes or until golden brown. Use a spatula to flip. Cook on other side for another 2 minutes until golden brown and then remove to a plate. Repeat with next batch if necessary.

    Calories do not include any additional toppings.
