wHY THIS AVOCADO BAGEL IS THE BEST
If you are looking for a quick delicious breakfast that is also protein packed, this is the perfect breakfast recipe for you. By adding the egg whites to the bagel avocado toast you are getting an extra boost of protein to balance the healthy fats in the avocado. The chewy bagel thin is a great option because it gives the great taste of an everything bagel without as many calories or carbs.

key ingredients
ripe avocado- it's important to make this when your avocado is at the perfect ripeness. If you have never selected avocado at the store look for ones that are starting to look darker in color and soft but not squishy. When they are green they are far from ripe and will be very hard making it impossible to smash.
everything bagel thins- I like the Thomas' bagel thins because they are lower in calories and carbs than a traditional bagel. I love the flavor the everything bagel seasoning adds to the sandwich. However you can use whole wheat bagels, a plain bagel or your favorite bagel flavor. You can also make this sandwich with a toasted bagel or untoasted depending on your preference.
egg whites- I never like to waste food so I buy egg whites in the carton for this recipe. If you prefer to crack your own eggs it will take about 5 large eggs to get a Β½ cup of whites. Egg whites themselves don't have much flavor but paired with these other ingredients they work perfectly. If you prefer you can scramble an egg instead.
Step-by-step instructions
Start by warming a skillet to medium heat. When the skillet is hot spray with olive oil or cooking spray. Add egg whites and stir with a spatula to scramble.
While skillet is warming and eggs are cooking, smash avocado in a small bowl using a fork. Add half of the salt and pepper and smash leaving slightly chucky.
When eggs are finished cooking, remove from heat. Split apart your bagel halves and toast the bagel. Then smear the bottom half of each bagel with smashed avocado mixture. Top with egg whites and tomato slices. Sprinkle with a little bit of salt and black pepper before adding the top half of the bagel.
Expert tips
An avocado bagel is best made to be eaten right away. As much as I love a good make-ahead meal, avocado isn’t too appealing after it starts to brown. You can add a little lemon juice to try to slow down the browning if necessary.

Avocado Everything Bagel with Egg Whites
Ingredients
- 1 avocado
- 2 everything bagels
- Β½ cup egg whites
- 2 tomatoes, sliced thin
- ΒΌ teaspoon salt
- β teaspoon cracked black pepper
Instructions
- Heat a small skillet over medium heat. Once warm spray with non stick cooking spray and add egg whites. Use a spatula to stir egg whites while cooking.
- While skillet is warming and egg is cooking, cut avocado in half and remove the pit. Scoop the avocado into a bowl.
- Sprinkle β teaspoon of salt over the avocado and mash with a fork.
- Toast bagel and spread bottom half with mashed avocado. Add egg whites and tomato slices. Sprinkle with remaining salt and pepper.
