These 4th of July fruit pizza cookies are one of my favorite desserts to bring to summer gatherings. Soft sugar cookies are topped with fluffy cream cheese frosting and finished with fresh strawberries and blueberries for a treat that’s just as beautiful as it is delicious. They’re simple to make and tend to disappear quickly once they hit the table. The red, white, and blue colors make them perfect for patriotic celebrations like the Fourth of July, Memorial Day, or Labor Day. Think of them as mini fruit pizzas—each cookie topped with bright berries and creamy frosting for a festive, crowd-pleasing summer dessert.

Equipment Needed
- Baking sheet
- Silicone baking mat or parchment paper
- Large mixing bowl
- Hand-held electric mixer
- Butter knife or small offset spatula
- Paper towels
- Cutting board and sharp knife
- Wire cooling rack
Key Ingredients
Refrigerated sugar cookie dough: The shortcut that makes this recipe truly effortless. It bakes up soft with perfectly golden edges every time.
Cream cheese: The base of the frosting. Make sure it is at room temperature, so it whips up smooth and fluffy.
Heavy cream: It lightens the frosting and gives it the indulgent, cloud-like texture.
Vanilla extract: Adds a warm, fragrant sweetness to the cream cheese frosting.
Powdered sugar: Sweetens the frosting and helps it hold its shape on the cookies.
Strawberries: Fresh and ripe strawberries add juicy sweetness and that pop of red color.
Blueberries: Those sweet, tiny, and perfectly round blueberries are the ideal topping for these fruit pizza cookies, which can be easily assembled.

Step-By-Step Ingredients
Bake the sugar cookies according to package directions. Transfer to a wire rack and cool completely before frosting.
Make the frosting by beating the softened cream cheese, heavy cream, and vanilla sugar with a hand mixer until fluffy. Add the powdered sugar gradually, mixing on low until smooth and spreadable.
Prep the berries by rinsing them and then patting them completely dry with paper towels. Chop the strawberries into small pieces and leave blueberries whole.
Frost each cookie. Spread a generous layer of cream cheese frosting over each cooled cookie using a butter knife or offset spatula.
Arrange strawberries and blueberries on each cookie, then serve immediately or refrigerate until ready to enjoy.

Make Ahead
- Bake the cookies up to two days in advance. Once fully cooled, store them in an airtight container at room temperature.
- Make the frosting up to 24 hours ahead and keep it covered in the refrigerator.
- Wash and dry the berries the night before, then store them in the refrigerator in a single layer on paper towels.
- Assemble the cookies no more than a few hours before serving for the best results. Once frosted and topped, the berries can release moisture over time.

Substitutions and Additions
Different fruit: You can use kiwi, raspberries, sliced peaches, or mandarin orange segments, all of which work beautifully as toppings.
Homemade sugar cookies: If you prefer to bake from scratch, use your favorite sugar cookie recipe as the base.
Add citrus zest: Stir a teaspoon of lemon or orange zest into the frosting for a bright, fresh flavor that pairs wonderfully with the berries.
Make it sweeter: Add an extra quarter cup of powdered sugar to the frosting if you prefer a sweeter flavor.

Storage
Store any leftover assembled fruit pizza cookies in a single layer in an airtight container in the refrigerator. They will keep well for up to 2 days, though they are at their very best on day one when the cookies are still soft, and the berries are fresh. Do not freeze assembled cookies, as the frosting and fruit do not hold up well to freezing. You can freeze the plain baked, unfrosted cookies for up to one month.
