Fruit Pizza Cookies

These 4th of July fruit pizza cookies are one of my favorite desserts to bring to summer gatherings. Soft sugar cookies are topped with fluffy cream cheese frosting and finished with fresh strawberries and blueberries for a treat that’s just as beautiful as it is delicious. They come together with minimal effort and tend to disappear just as quickly once they hit the table.

Ingredients

  • 1 package refrigerated sugar cookie dough
  • 1 8 ounce block cream cheese, softened to room temperature
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 and ½ cups powdered sugar
  • 1 cup strawberries, chopped into small pieces
  • 1 cup blueberries

Instructions

  • Bake sugar cookies according to package directions. Cool completely before adding the cream cheese icing.
  • Add the room temperature cream cheese, heavy cream and vanilla extract to a large mixing bowl and use a hand held mixer to whip until fluffy. Gradually add the powdered sugar in small increments until completely incorporated.
  • Wash the berries and dry thoroughly on a paper towel. Cut the strawberries into small pieces.
  • Use a knife to spread the frosting on top of each cookie. Decorate with the strawberries and blueberries for a fun patriotic dessert cookie!
