There's something about a Sloppy Joe that instantly takes me back to my grandmother's kitchen. This Crockpot Sloppy Joe recipe is her old-fashioned recipe, and it was her clever way of using up whatever was coming out of her garden, whether bell peppers, onions, or the tomatoes she canned herself every summer. Grandma never used a drop of ketchup, and honestly, once you taste the real deal tomato flavor in these classic Sloppy Joes, you won't miss it either.

She always simmered hers low and slow on the stovetop, but let's be real, most of us don't have hours to spend babysitting a pot on a busy weekday, so I adapted her recipe for the slow cooker, and these easy Crockpot Sloppy Joes come together with barely any hands-on time.

Why You'll Love This Crockpot Sloppy Joe Recipe!
If you want all the cozy, tangy, saucy goodness of old-fashioned Sloppy Joes without standing in front of a hot stove, this slow cooker version is about to be your new weeknight favorite! It's made with pantry staples and fresh veggies, and the crockpot does all the work while you go about your day.
Here are more reasons why you'll fall in love with this recipe:
- No ketchup needed! The diced tomatoes and tomato sauce build real, from-scratch flavor the way my grandma made it.
- It's an excellent way to use up extra bell peppers, onions, or home-canned tomatoes from the garden.
- Perfect for busy weekdays, game day, potlucks, or feeding a hungry crowd.
- Freezes and reheats beautifully for easy meal prep.
- Kid-friendly and easy to customize with your favorite toppings.

Equipment Needed
- Large nonstick skillet
- Crockpot (6-quart recommended) or slow cooker
- Spatula or wooden spoon
- Knife and cutting board
- Measuring spoons
Key Ingredients
Lean ground beef: Keeps the Sloppy Joe mixture rich and hearty without being greasy. Be sure to drain well after browning.
Onion and green bell pepper: The classic duo that builds the base flavor. Grandma used to pull these straight from her backyard.
Diced tomatoes and tomato sauce: I would say it's the heart of the best homemade Sloppy Joes recipe.
Brown sugar and apple cider vinegar: These sweet and tangy ingredients make the sauce the perfect balance of flavors.
Dry mustard, paprika, chili powder, and cayenne: A warm, slightly smoky spice blend that adds depth without overpowering the tomatoes.

Step-By-Step Instructions
Heat a skillet over medium heat. Brown the ground beef, breaking it up with a spatula as it cooks. Once fully cooked, drain off the fat and transfer the beef to the Crockpot.
Wipe out the skillet and turn the heat down to low. Add the olive oil along with the chopped onions and green bell pepper. Stir occasionally so the onions don't burn, and saute for 5 to 7 minutes or until the onions are translucent. Add the peppers and onions to the crockpot with the beef.

Pour in the undrained diced tomatoes, tomato sauce, dry mustard, paprika, chili powder, cayenne, salt, pepper, brown sugar, and apple cider vinegar. Stir everything together until well combined.
Set the crockpot to high for 2 to 3 hours or to low for 4 to 6 hours. The meat is already cooked through at this point. The slow cook time is all about letting the tomatoes cook down and the flavors meld.
About 30 minutes before you're ready to serve, prop the lid slightly open to let the steam escape and the sauce reduce down to that perfect thick, sloppy consistency.
Spoon generously onto toasted buns and serve with chips, fries, or your favorite side.

Serving Suggestions
- Pile onto toasted hamburger buns or brioche buns with a slice of melty cheese.
- Serve with fries, potato chips, or sweet potato fries.
- Pair with a crisp coleslaw or a simple green salad to balance out the richness.
- Spoon over baked potatoes or a bed of rice for a fun twist.
- Top with pickles, shredded cheddar, or thinly sliced red onion for an extra layer of crunch.

Make Ahead
This is one of those recipes that gets better as it sits, which makes it an excellent make-ahead dish. You can brown the beef and sauté the veggies the night before, then store everything in the fridge. In the morning, dump it all into the crockpot with the remaining ingredients and turn it on before you head out the door or do your chores.

Storage
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze the Sloppy Joe mixture for up to 3 months. Thaw overnight in the fridge and reheat on the stovetop or in the microwave, adding a splash of water if the sauce has thickened too much.

Expert Tips
- Do not skip browning the beef or sautéing the peppers and onions- this creates the flavor of the dish.
- Prop the crockpot lid open during the last 30 minutes to reduce the liquid.
- Toasting the buns is a game-changer. A quick toast keeps them from getting soggy under all that saucy goodness.
- This recipe doubles easily for a crowd and is perfect for game day.

- 1 small green bell pepper, chopped (about 1 cup)
- 1 can tomato sauce
- 1 28 ounce can diced tomatoes (do not drain)
- 1 teaspoon dry mustard
- 1 teaspoon paprika
- 1 teaspoon chili powder
- ¼ teaspoon cayenne pepper
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon brown sugar
- 1 tablespoon apple cider vinegar
- 8 hamburger buns for serving
Instructions
- Heat a skillet over medium heat. Brown the ground beef and break the meat up with a spatula. Drain the fat away from the ground beef and add the beef to the crockpot.
- Wipe out the skillet and turn the heat down to low. Add the tablespoon of oil along with the chopped peppers and onions to the skillet. Stir occasionally so the onions do not burn. Sauté for 5-7 minutes or until the onions are translucent.
