We all have those days when we only have time for a quick 5 minute lunch. Luckily cottage cheese toast is not only quick and easy, it is actually delicious.
I got the idea for cottage cheese toast years ago. It was my favorite easy lunch on my days off from work. I could prepare this in just minutes and customize the toppings depending on what I had in my refrigerator or pantry.
While tasting delicious, it also has plenty of healthy benefits. It is the perfect low calorie, high protein meal to keep me fueled throughout the day!
What Is Cottage Cheese?
Cottage cheese is made by adding an acid to pasteurized milk. Because cottage cheese is a fresh cheese (meaning it is not aged) it has a very mild flavor. This makes it very versatile for many different recipes.
Cottage cheese is also a very healthy option because unlike most cheeses it has low calories and high protein. It is regarded as being one of the healthiest cheeses and added to the meal plan of many athletes and body builders. With one cup of regular cottage cheese having 25 grams of protein it is a great option for breakfast, lunch or a snack!
Key Ingredients
whole grain bread- I prefer a whole grain or wheat bread for my toast but you could use sourdough or whatever type of bread you prefer.
cottage cheese- plain cottage cheese is the best option because you can add your toppings to flavor to your preferences. Whether you opt for a higher fat cottage cheese or a low fat variety is really your personal preference.
Step-By-Step Instructions
Start by toasting your bread. I like my bread more on the crunchy side plus I find it holds up to all of the toppings better.
Spread your toast with a layer of cottage cheese. It is really difficult to say an exact amount because it will depend on the size of your slice, but you will probably need a few tablespoons.
Next add your toppings of choice. I have given a few ideas on sweet and savory toppings, but the possibilities are really endless.
If you are opting for a sweet option add a drizzle of honey or pure maple syrup to the top of the cottage cheese. If you are going with a savory option like tomato slices, a pinch of sea salt and a drizzle of balsamic glaze is a delicious addition.
I also love to add a sprinkle of cinnamon or chia seeds to my toast.
Topping Ideas
There are so many amazing topping ideas outside of the 3 variations I have listed in this recipe. Add cottage cheese to avocado toast for a great source of protein. Any fresh fruit will taste amazing with creamy cottage cheese. Add slices of cucumbers with fresh dill and a drizzle of olive oil for a savory cottage cheese toast. Variations
Now if you are not a fan of cottage cheese you may want to try whipped cottage cheese because that completely changes the texture. It only takes a few pulses in a food processor to change the curd texture into a creamy spread similar to ricotta cheese. Ingredients
Toast
- 1 slice whole wheat bread
- ¼ cup cottage cheese
Strawberry Toast
- sliced strawberries, drizzle of honey, a sprinkle of cinnamon and chia seeds
Granola Toast
- granola, dried cranberries, slivered almonds and drizzle of honey
Tomato Toast
- sliced tomatoes, drizzle of balsamic glaze, salt and pepper
Instructions
- Toast bread slice. Spread toast with cottage cheese.
- Choose toppings and arrange on top of cottage cheese as desired.
- Serve immediately.
